- Skillet cookies: perfect for lazy nights when everyone wants something sweet, but no one wants to work that hard for it. Thankfully, Samantha Seneviratne is here to show us how to make her recipe, which comes together quickly in just one bowl. A well-seasoned cast-iron pan is perfect for this, but a basic ovenproof skillet or an enameled version will work well, too. (Just be sure to avoid anything with wooden or plastic handles!) Serve big scoops of warm cookie in bowls topped with ice cream or whipped cream, or serve cooled slices like you would any cookie.

even though I bookmarked another nyt yt video for chocolate chip cookies, I feel like I will most likely end up baking this one (just for simplicity's sake)... but I might ball up just a few scoops to freeze for a rainy day (small cookies)... honestly the scoops of vanilla ice cream at the very end, that seems like the perfect touch... thanks for sharing this

If you want to use butter straight from the fridge, for a recipe that asks for room temp butter, you can just cut the amount in cubes and microwave it seconds at a time until it's soft but not melted :) (microwaving the whole stick would end up in melted exterior and hard interior). Coconut sounds delicious!
Does anyone else know this as pazookie?? Not even sure about the spelling on that, but I think it's short for pizza cookie. You just can't go wrong with it, especially with ice cream scooped on while it's still hot. One of my favorite desserts to go at with friends, just eating it straight out of the skillet.

I absolutely love starting the video off like one of those recipe sites where you just want a recipe for cookies or brownies but they tell you a manufactured story about their childhood and parents so you have to scroll to get to what you want.

I follow this recipe, but bake it in a 9x13 pan. That way I can cut it into uniform rectangles.
The bottom area of a 12-inch cast-iron skillet is about 78 square inches, so any pan with that approximate area, like an 8- or 9-inch square baking pan, should work for this recipe.

stupid comment. are you implying Samantha can only make Sri Lankan food because of her roots? she’s been nominated for several awards for her MULTIPLE cookbooks and is well known across the food sphere, just because this recipe is simple doesn’t mean Samantha didn’t take time to develop it and make it easy for us home cooks to replicate.
