Mahi Mahi with Peach Salsa - Blackstone Griddle Recipe

- In the summer, I love seafood. Mahi Mahi was on board today and it was phenomenal.
1 teaspoons brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 teaspoon cumin
1/2 teaspoon chilli powder
Drizzle with olive oil
Mahi Mahi filet/side of
Peach Salsa
1-2 peaches
1/2 jalapeno
1/4 cup red onion
1/4 cup red pepper
1/4 cup chopped cilantro (more or less depending on your taste)
1/2 lime
2-3 tablespoons honey
Drizzle olive oil
Asparagus
Salt
Pepper
Cilantro Lime Rice
2 cups Jasmine Rice
2 cups water or chicken stock
1/4 cup chopped cilantro
Zest of lime
Butter
Salt to taste
1- Melt butter and add rice to toast.
2 - After 2-3 mins, add water/stock. Bring to a boil. Cut to low simmer for 15 mins.
3 - After 15 mins, add cilantro, lime zest, and juice of lime. I also add some more butter and some salt.
4 - Taste for flavor and enjoy

I think I may try this HH. It looks delicious and I really like the idea of the peaches. I don't eat nearly enough, and I don't cook with them at all, but you're giving me some great ideas! Especially that peach dessert you made a couple weeks ago or so. I haven't made that yet, but I will. Peaches is a great summertime treat, and you reminded me...I need some honey. I think I whined about my honey already.....how it crystallizes in the jar and nothing I've done gets it to come back to liquid form again.....and I've tried them all.
I love this dish because it's a perfect summer meal, and it gives another option for toppings for fish, which I love. Thanks once again HH. Oh....I am a bit OCD on my videos, so I really only will watch them on the weekend. Don't let that stop you from making them during the week though! Always appreciated....be well!

Fish looked awesome. On a different subject. A while back you made your take on Lexington vinegar dip. It looked good so I tried it. It was a hit. Had to make some for my daughter & her family and I've made 4-5 batches for myself. Good stuff. Thanks.

Canola oil has worked the best for me. The key is thin coats.

Thanks Ryan. I may have to look at getting some blinds of sort to hang to get shade from the incoming sun in the evening.
Lighting is always a challenge, especially in a half shade/half direct sunlight situation. When your camera's iris is set to make the shade bright enough, then you risk blowing out your highlights in the sunny part of the frame.... it's tricky! Your sun shade idea is definitely a good one.
Or blinds idea, rather.

Removing it is subjective around here. It just has a tad stronger flavor that some find off putting. For me it’s no big deal.

I went flesh side down, typically to get the best sear on the side you're presenting.

No, not at all. I just hit it with water and scrape and wipe clean again.

Actually, what you're seeing is contrast of light seasoning and thick seasoning. Had some problems so I just blocked it and reseasoned. It's not rust though.
