Mom was of Austrian/Welsh descent, she made this sometimes and we all loved it. I never really knew how she made it and it was in her head so no written recipe. Thanks for doing this recipe, I know what I'll be making tomorrow!
My Mom and Grand Mom both made their German Potato salad the same way with one small addition. They always used about a teaspoon of Celery Seed to the onions while they cooked. She did say you could use any herb that you liked (Parsley perhaps or even chives) to change the overtone flavor of the bacon. I've actually done this with mine, and it does make it a completely different flavor. They did the same type of thing when they made the various pickled foods too. We'd always make more than one vat of sauerkraut so you could have plain in one vat, and one with either garlic or fennel, celery seed and even an Armenian variety that included apple slices or even red beets. The initial reason behind these old recipes was to make the fresh harvest in the fall last into the winter. This stuff got preserved in jars most times so you had wholesome food to eat all winter and even into the spring. It didn't originally include sugar until you opened the jar, to prevent spoilage, as sugar feeds bacteria, and the vinegar would pickle the potatoes and the cooked bacon. Back then every family had a smoke house if they were lucky enough to have a few animals to slaughter. If you had enough to cure a large batch, you used barrels to pickle the bulky foods like, eggs, cabbage, cucumbers, onions, beets and even corned beef, so you could have beef in the winter that wasn't totally salted and smoked. This stuff was done for survival and it also stored well on ships for long voyages.

I have my Great Gramma Neubauer's recipe for German potato salad and this recipe almost mimics her's (I was searching out of curiosity, to see if I could find anything close). The only difference is that, my GG, made hers to simmer with raw potatoes. I came up with a par cooked potato recipe that cut the time in half, that way you don't have to wait the extra 45 mins, HAHA! I like this as an even quicker go to! Dig it!

Before searching for the German potato recipe, I saw your video in the suggested section of RUclips😊 My Mother made hers the same way and I haven't had this in years. Meagan Downward You will love the areas of Germany that are not multicultural ghettos. Sad but the influx of refugees that hate everything the West stands for have ruined so many gorgeous areas of Deutschland. Europe basically guilt-tripped Germany into taking them in. Sad. Do try and visit Poland, Czechoslovakia, Romania, Austria and Switzerland while you’re there. Be safe as well and thank your husband for his service.
Don't be surprised, Meagan, when you will find out that "warm" potato salad in Germany is found in a small region of the country. The dish is commonly eaten as a cold side dish and finds a variation in recipes from north to south. The north prefers the dressing with mayo, while the south rather goes for a vinaigrette based dressing... the north might eat it with fish, the south with bratwurst or frikadellen (hamburger patties). I was born and raised in Germany... and, by the way, have never seen it with skins on or diced. Enjoy your time in Germany
Love it all except the sugar, I guess my German grandparents came from the non sugar potato salad region. I don’t know. My daughter has lived there for 15 years and she doesn’t use sugar either. I guess it truly is regional. I love the recipe and thank you. 🦋💜

I love german potato salad---I put probably half a pound of bacon in mine though. I love the flavor of the bacon mingled with the sweet/sour taste of the dressing. I like mine cold- I know a lot of people like it hot though
I'm like you with the parsley...but now I keep half the bunch out and wash, spin in the salad spinner and chop and freeze the other half. I just pull the bag out of the freezer and break off what I need and put the bag back. Works great and I'll save those stems from cleaning them and freeze them for seasoning stock. I do keep dried too for when I don't have any on hand or for in the crockpot.
It looks so yummy!! All the bacon fat would kill me but what a way to go!!! lol This takes me back to my childhood also. My Granny used to make this all the time. She would also use this hot dressing with dandelion greens or leaf lettuce from our chuck patch. Those were the days!!
You don't want the potatoes fried. This is how it's done. If you put the potatoes in first they will suck up all the bacon drippings and you won't have a dressing, you will have a mess.

Not every recipe is the same. Mine does not require a thickened dressing. I sometimes put celery seed in it, but not always. There are as many was to make German potato salad as there are cooks who make German potato salad. I didn't leave out anything I needed in my recipe.

I freeze my parsley in whole bunches, when needed (for cooking purposes), I take it out and while frozen chop what I need off. It works perfectly.
