Buy it nice or buy it twice.
My budget is limited, but granite appears to be my best alternative based on durability, real world use, and the appearance of the material.
In my experience, laminate is a non-starter when any moisture is present, like, well, anywhere in a kitchen.
Wood is a non-starter because no matter how careful you are, you will end up with gouges in the surface.
Quartz looks bland, and while it is less prone to damage from a hot pan than laminate or wood, it is expensive to repair when the inevitable happens.
Tile is easily damaged by impact, and even when the grout is "properly" sealed, the grout will eventually discolor, a cleaning frustration.
Concrete, well, I work for a consulting engineering company, and while concrete can't be beat as a sidewalk or a driveway, I wouldn't use it for a food-contact surface.
When I ruled out the bad choices, I found that my first choice is the best choice.
