I'm a food scientist and here comes a fun fact: isoamyl acetate is the main compound of the typical banana flavour in both the Gros Michel as well as the Cavendish. The difference is the concentration, the Gros Michel has more of that esther. So if a banana candy tastes artifical, it just contains too much of that compound.
Another fact: there are scientists that actually try to bring back the Gros Michel by genetically modifiying it for a better resistance to the fungus 🎉.

What about artificial cherry or grape that is even further away from tasting like the real thing? They taste the most different from the fruit they were based off, just my thought

Funfact: The “species” or “race” of fruit when talking about banana or apple or something like that is usually just 1 plant, but with many, many clones.
For example Granny Smith apples are all basically from the same tree.

As cool as this would be, it’s simply not true. Every one spreads this around like it’s fact but you can still buy Gros Michel and taste it, and it tastes nothing like artificial banana.
Was artificial banana flavoring based on Gros Michel? eeeh maybe? But it still isn’t “The reason it doesn’t taste like real bananas.” For those wondering Gros Michel tastes (at least when I tried it) like less “chalky” cavendish bananas. They taste nearly identical (which is why we replaced them after the fungal disease)
