    In this case the smaller vortex would be better to prevent from burning the wings.

      I would have to agree with that statement but it was also brought to my attention that you meet to rotate the lid like every ten minutes as the hot spots happen below the lid vent where the hot air exits. And I put this to the test the next time and hot spots were gone. But I agree that the smaller vortex could help also.

    You’re getting hotspots because you’re not rotating the lid. The heat comes up from the bottom vent and out the top vent. That’s where all the heat is, exiting through the top vent, as well as around the sides. Instructions for chicken wings with the Vortex indicates rotating the top lid every 15 minutes. Flipping them at the 30 minute mark.

      Ha ha ha, I did this very same thing the next Wing Cook I did after. Thank you for pointing that out to everyone. I love using the Vortex Style Coal Baskets… they work great for Indirect hot and fast cooks! 😎♨️👍
