- Pro chef Chris Cheung from East Wind Snack Shop and home cook Emily are swapping materials and hoping for the best! We set Emily up with a selection of the finest ingredients from chef Chris’s kitchen, along with his recipe for a $135 batch of dumplings. With some unfamiliar ingredients and plenty of questions to accompany them, food scientist Rose dialed in for a tutorial teleconference to help Emily along the way. Meanwhile over with chef Chris, a much more modest $13 worth of ingredients were being finessed up to gourmet status while making dumplings without his usual arsenal. I've actually started using medium a lot more because of Emily. I do think my food has been less burnt on the whole.

One exception would be perhaps pan seared salmon with the skin. If it doesn't cook fast enough all the skin will stick to the pan and you'd tragically be left with skinless salmon.

oyster sauce: has oysters

To be fair, cocktail sauce is sauce for cocktails, not made from cocktails. So it's not unreasonable to assume that it's a sauce for oysters.
Oyster sauce is the life of stir fry. Freaking delicious
BBQ sauce isn't made of BBQs
Also note that that's a particularly high quality pure oyster sauce which Chris bought for Emily. The cheaper oyster sauce will often use a much smaller concentration of oyster and substitute other ingredients (caramel for colouring, cornstarch as a thickener) to cut costs. You can even use mushroom extract to make a "vegan" oyster sauce.

His cheating was a bummer. Emily didntvsay "Well wrappers are just as good from the package..." and dump his wrapper ingredients. She didnt add ketchup to it since to her ketchup makes things better.

@@tapp3r109 nope she's still level 1 in the 4 levels videos. For the swap ones, the Home cook can be either level 1 or 2 while Pro is 3 as usual.

@@ang5798 Not promoted. Still Level 1 in the 4 Level videos. The swap ones only have two types of cooks, Pro or Home. So Level 1 or Level 2 are Home cooks. Emily has been the "Home cook" in previous swap videos, but was Level 1 in the kebabs.

I mean dumplings is one of those cases where simple ingredients are the star of the dish. Good wrappers and technique make the dish - and neither is expensive nor different. The filling is just a bonus.

loving the evolution of emily from being ketchup lady to a legit coming home cook
Emily had to work with a lot of complicated ingredients and she did not do that bad at it. The fact that they both were planning to make an asian style dumpling is predictable, but I really like that the home cook’s recipe showcased asian dumplings in a simple way, and the professional chef’s recipe showcased it in a more complicated way and we get the best of both sides because of that. The inclusion of lard and king crab on the professional chef’s recipe was very smart and cool in my opinion since it adds a interesting spin to the traditional asian style dumpling. Also, I like that the professional chef combined vegetable oil, water, and tapioca starch to the pan with the dumplings because it seems to add a very nice crust to it and the combination of Emily’s carefree, determined, and laid back personality and how focused, detailed, and straightforward the professional chef is, is great.

It actually looks like Emily has progressed A LOT since first being on epicurios as just the ketchup girl. It's great to see. Keep it up!
I think Chris's modifications were really consistent with the original price of Emily's dumplings.
Making your own wrappers from scratch is actually a lot cheaper (and tastier) than buying premade wrappers.
Chikiang Vinegar and Rice Vinegar have very similar prices in a lot of asian groceries.
Starch (it could be cornstarch as well) has a pretty negligible cost and is readily available in almost every kitchen. Usually, you can add a lot less of the batter in to get a crispier snowflake pattern (only need a tablespoon per batch).
Where I'm from we don't have pre-made wrappers so I NEED to make them myself. And yeah I agree that it's cheaper. But it's not convenient at all, it's so painful.
unless you live in asia where the premade wrappers are the same price as making them yourself, i live in southeast asia and my grocery store sells 100 wrappers for $1.80, some restuarants use these premade wrappers since they taste nearly the same as made from scratch.
God the pro chef’s wrappers are so round paper thin and beautiful I was sh00k how easy he made them
he made like, 1000 dumplings a day.

If the professional chefs are going to add things or change the way they come to certain ingredients, ie making wrappers instead of using store bought, then that's fine, but I would at least like to see each original ingredient used.
I agree! It does feel like it goes a bit against the premise of the show, given it is meant to be about the cost of the ingredients and what a professional chef can do with low budget ingredients vs what a home cook can do with ingredients they are not used to. So I feel like letting the pro chef add a bunch of things that were not part of the home cook's recipe at all kind of ruins the whole "budget" feel of the box. I would like to see how much his "additions" jacked up the price cause I'm certain some of it would push the box value over $20 at the LEAST. I feel like if Emily had thrown out half the ingredients to make it easier on herself people would have been more upset.
What does premade dumpling wrappers add though? That's not really an interesting challenge, just a downgrade and it takes away the opportunity for the chef to teach a basic skill.

@@ZombieMinion1992 I think it ok if the chef substitute cheap ingredients but wrong if he use fancy expensive stuff. The chinkiang vinegar is like $10 on amazon and $2 in local Asian store so somewhere around $5. He also say it like balsamic vinegar so that would be $3. Then he use flour which is like $3 (tapioca flour is around $3 as well for 1 pound just like normal flour) They should add the prices of the substitute ingredients as the chef use it so people don't get mad and think the chef is cheating for using a $5 bottle of vinegar.

That NY accent is pretty intense. I half expect to see his mom, the Statue of Liberty, show up in Giants jersey a pair of Timberlands. As for dipping sauces. I recall eating some dumplings in the Shanghai airport and being completely bewildered. There are like 5 sauces to choose from with likely some element of mixing expected, but I just had to go for it.

I have to give Emily props for taking these challenges. Known as a ketchup lady she has persisted to come back on the show and has grown. It also nice to have the other side of having a pro show how much more can be done starting with making your own wraps and his folding of the dumplings.

Emily is doing great! This isn't easy--and it looks good. Enjoyed this particular pro chef and his straight-forward approach. And then Rose--who doesn't love Rose. She definitely adds to this "series" (or whatever you call it).

No, don't die yet, she is still a level 1 chef in the 4-level series. In this series, there are only home cook and Pro. Both lv 1 & 2 will be classified here as a home cook. As long as you are not the professional chef, you are a home cook here. They will never promote Emily though as they need her at lv1, but honestly, skill wise, she must have been around Lv 1.8 now.
I just made my first dumplings from scratch yesterday, it was a lot of work but they turned out really great!
This is one of the purest videos I have seen from both parties. And it's this positive attitude and encouragement I can get behind. Yay! :)

i know this is gonna get lost in the comments but, me and my ex broke up almost 6 months ago. i’ve been shattered ever since and i can’t seem to get over him. we dated for 2 years and he meant everything to me. These videos, the $$$ vs $ cooking vids, have such an impact on me bc they had a huge significance on our relationship, some nights we would facetime and turn on one of these videos and watch it together at the same time; it’s stupid but i miss him.

Earlier this month, the person I considered to be my best friend said she never wanted to speak to me again. It really does hurt, and it's lonely. You know there's the hole now. Most of the Lv3 chefs used to come from the School of Culinary Education, including Frank, may be the channel used to be partner or signed the contract with the school. Maybe the contract ended or something like that. We don't see all the chefs from that school anymore, not only Frank.

Nope. Just because she's home cook in this series doesn't mean she's home cook in level 1 to 4. There are only 2 chefs in swapping cooking: Home and Pro. She might upgrade someday though.
