Smoked Salmon Recipe, Genesis II E-310 Propane Gas Grill, iGrill 3

- A large Salmon Filet, Smoked in a Weber Genesis II E-310 Propane Gas Grill, with Apple Wood Chunks. iGrill 3 is also used and temperatures displayed. This video gives the full step by step recipe and instructions.
D Grill’s Smoked Salmon Recipe:
Ingredients:
2 - 3 pound boneless salmon fillet
Pam Spray with Olive Oil
Brine:
• 6 cups warm water
• 1/2 cup Salt
• 1 cup brown sugar
• 1/2 tablespoon ground cinnamon
Wood for Smoking: Apple Wood Chunks, soaked 1 or 2 hours in advance.
Instructions:
1. Mix/Combine Brine ingredients fully using a whisk and allow to cool.
2. Brine overnight in refrigerator, 8 - 12 hours.
3. Rinse and pat the salmon dry with paper towels.
4. Place the salmon on aluminum foil that has been sprayed with Pam spray. Let the salmon rest uncovered in the refrigerator, for 2 - 4 hours. It should have a shiny coating.
5. Take salmon out to rest when warming the grill and wood chunks.
6. Grill temperature for cooking should be 325° F. Use indirect heat, with just one burner running during cooking. The smoker box will also produce its own heat, so no other burners should be used.
7. Place the salmon in the foil on the grill. You can just lift the ends of the foil and place it right on the grill.
8. Cook at 325° F., till internal meat temperature is 145° F.
9. Enjoy!

Hi Darnell and thanks for the great videos!!! Try your recipe with non-iodine salt and wild sockeye salmon sometime. Hopefully you can get the wild sockeye where you are (Tennessee ??) in the summer months. I think you'll like it even better!!!

excellent. Thanks again for an excellent video. Two questions: a) Did you lay one grill on top of the other so that you can fit the smoke box? How did you suspend it there? b) even with only one burner on, my Genesis is still hot, I have had to close the input valve about 75% to reduce gas input. Does this happen to you?
I don't fiddle with the gas input at all. I leave it on full.

Watching this right now. It is killing me because salmon is one of my favorites! This is what my family are voting for my husband to make when our new grill comes. He wants to know if you think there's any difference between propane and natural gas as far as the flavor of the food goes.
I had a natural gas grill once upon a time. I don't think there's a difference in flavor. I mean, I've never eaten from either grill and said "I taste propane" or "I taste gas" 😃. Neither really imparts any added flavor. Which is why I usually use the smoker box for smoke flavor, unless I'm using the rotisserie. Another option, a cedar plank. I've got something for that in the works for a coming video.
I like the brine. I think I’ll leave the cinnamon out of it next time though.
