@@ThaiCaliente first thing that comes to mind is each piece of meat needs to have solid even contact with the pan, so you get a good sear, not just little bits on them. Higher temp for less time in the pan. Just practice really. But at the end of the day none of that really matters as long as it tastes good. Thanks for the recipe!

You can add a marinade of soy sauce, it's all personal preference.
