Dried persimmon fruit turns brown. How can dried persimmons stay orange without turning brown? Additionally, dried persimmons often exhibit a white crystallized sugar accumulation on their surface (appearing as if molded), but in this case, there is no such sugar buildup. How is this possible?

They are removing bark scale, not the tree bark.
