Your messing with the A/F mixture on a hard programmed ecu power curve that was tunned with the restrictors in place. It seem that the plates open up when the throttle is opened anyway so removing them shouldn’t have hurt anything. I’m sure that some engineers would differ and it was designed that way for a reason. With everything going fuel injection it’s only time before fuel pumps start failing

What are some reasons you wouldn’t want to remove them in theory?
Your messing with the A/F mixture on a hard programmed ecu power curve that was tunned with the restrictors in place. Like another mentioned above... your mid range does suffer a little but on highway at top end it doesnt front dive on decel as much(engine braking)
Quicker response on throttle but smoothness is obsolete. I have cobra dragsters and a DIY open airbox so im already at max bolt ons lol but the most i noticed is more comfortable top end, 1-2 better take off, mid range 3-4 is suffering but not like "oh crap i need those back in" top gear at 70 and needing to pass i feel like its got enough umph to get around safer.
Did it help or hurt gas mileage. And does it idol right when it's cold outside I've completely debated mine and shorted the longer pipe to have matching lengths looks a sounds awsome.
On the gas mileage I do not know yet and cold weather I do not know yet but this coming Saturday is supposed to be cold I will be doing tests on that I do not know when the video will come out but they a couple people ask about gas mileage and I'm wanting to know myself and will you asking about the cold weather I'll be finding out just come in Saturday and hopefully everything will be working good do you have a video of your exhaust the way you've done it I would love to see that thank you for your comment
