Grilled Shrimp in Chipotle Honey Marinade

    We're sharing an easy grilled shrimp recipe with a marinade that really brings out the flavor in the shrimp. A little heat and a little sweet makes this the perfect shrimp marinade!
    20 - 25 large shrimp (raw, un-peeled)
    6 tablespoons olive oil
    4 cloves garlic, chopped
    3 tablespoons honey
    ½ teaspoon cumin
    3 chipotle peppers in adobo sauce, chopped (from can)
    1 teaspoon sea salt
    1 teaspoon coarse ground black pepper
    Juice of one lime
    Wood grilling skewers
    -Peel the shrimp and remove the tails. Set aside
    -In a small bowl, combine the remaining ingredients and whisk until smooth.
    -Toss in the shrimp and stir until well coated. Place the shrimp and sauce in a Ziploc bag and refrigerate at least 6 hours or overnight.
    -Pre-heat a grill to 400 degrees F. Clean with a wire brush and oil well.
    -Skewer the shrimp. Place the skewers on the cooler side of the grill and let them warm up about 1 minute per side.
    -Move the skewers to the hot side of the grill and grill about 1 ½ minutes per side or until opaque in color.
    -Let rest a minute before serving.

    Hey Mr. Rollins. I just want to leave a note expressing how much I enjoy your videos. I bought your cookbook a while back and recently discovered your youtube channel. I know this is a business for you but you obviously enjoy this so much that it is infectious. I am in the process of undergoing a pretty gnarly chemotherapy schedule ( I will beat the cancer!) and I spent the better part of a 3 hour chemo session watching your videos :) Made a hard experience a lot easier.     Sweet. I mean sweet shrimp....going to give this a run tomorrow. Will pick up prawns 🍤 today and hit grill after they soak up “the goodness” overnight. Blessings to you, Shannon and the Beagle. Also, want you to remember the good times and life with Frank the wonder dog. We lost our wonderful Beagle kitty Lexus a few years back and both miss her every day.     Kent you have become a super star. I live in a little town in East Texas and I was in my local Kroger and I was talking to a person in line about cowboy coffee and I had a lady in front of me and say is that the one from cowboy Kent Rollins and I said yes ma'am and she said I watch him will the time. We talked about different recipes and cast iron until she finished check out. Thank you from all of us out here.

    Cooked these, but when I went to my apartment complex’s grill, it had run outta propane. Ended up broiling them, but still tasted amazing!

      broiling is an excellent way to cook meats/fish. it is essentially upside down grilling with a clean heat source, i did steaks this way for years with amazing results.

    I learned a little tip from Elton Brown years ago. If you are using something hot like the chipotle peppers, or hot sauce for wings, or whatever, I like to add just a little bit of melted butter to the sauce to bring the heat down. There is something where the oils in the butter bond with the oils from the peppers and cuts the heat. I love those chipotle peppers in adobe sauce, but its just a tad too hot for me usually so I can use a little butter to make it enjoyable.

    Hey, I didn't know they had Red River Stick Shrimp! That looks delicious. I was also impressed at that modular design on old Birtha. And what ever new dog comes into your lives, don't get 2 beagles! One will be stealing your heart, while the other is stealing you food! LOL

    Hi Kent, if you have any wine or beer on hand, by soaking your skewers in that, it adds another great flavour to the food. I keep an empty glass bottle and lid with my outdoor kitchen to make sure that I am able to flavour my skewers. Works fantastic with the delicate flesh fish or even chicken. I’m impressed with yours and Shannon’s ongoing work. Keep it up.

    Those look awesome! Have you ever made Iowa Pigtails? Get a boneless pork loin remove the fat, cut into strips about the size of a large hot dog. Wrap a slice of bacon around it and slide it onto a skewer and grill them up. You can leave them plain or add spices. We love em!

    Well being here in Florida I am only 50 miles from some fresh shrimp. I guess I am headed to the coast to get about 5 lbs and cook them with this glaze.     Ok ......Today I did Kent’s shrimp after marinating overnight as instructed....not only that , decided to make the shrimp with his salmon recipe ....OH MY , both recipes were awesome .... if you like shrimp try his recipe out ....first time I ever used chipotle in Adobe sauce .....opened the can and took a sniff.... to me it smelled like a very heavily smoked bbq sauce and on the shrimp WOW, it compliments the shrimp perfectly
    ..... not a piece a salmon was left and not a shrimp could be found ....Thank You Mr Rollins for the great recipes .... this one was knocked outta the park ....

      Cowboy Kent Rollins my wife is gonna make me go to one of your schools sooner or later ... I may have to bring you some jumbo jumbo x- large Gulf Shrimp ..... about as big as your palm ...I think one skewer will hold maybe two shrimp... I learned years ago ... they have to be grilled , if you fry them ...the dogs get em ... ( Beagle would love them )they end up “jerky shrimp”

    I didn't read all the comments so maybe someone else has already suggested it, but if you soak your sticks in water for about 30 minutes they don't char so much. Can't wait to try this!
