You can re-imulsify a sauce with one egg yolk that’s whipped. Add the hot sauce to the egg yolk to temper it then add it all to the sauce. Brinks the broken sauce back together. I do it with homemade Alfredo all the time when I have leftover sauce.

re: saving oil, we do the same thing with bacon grease. We have a little mesh scoop thing that we pour it through into a jar, and it sits there until we use it, which is quite often.
You can add salt to buttermilk, and brine chicken to that. Works very well! Also, I keep the used oil and use it as through out the week to grease and season my pans. if I’m making dressings or marinades it works well there too.
