- Hi there!
Today, I made a moist and soft cake with plenty of olive oil.
The process is simple, so if you like olive oil, you'll definitely fall in love with it!
Ingredients (15cm round mold)
115g of olive oil
3 eggs (medium)
1 teaspoon vanilla extract
50 g of coconut powder
40 g of sweetener (Lakanto)
1 teaspoon Baking Powder
1/2 teaspoon Baking soda
a pinch of salt
How to make
1. Put powder ingredients (coconut powder, sweetener, baking powder, baking soda, salt) in a bowl and mix them well so that they don't clump together.
2. In another bowl, beat in eggs, add vanilla extract, mixing well.
3. Pour olive oil into the egg and mix.
4. Divide the mixed powder ingredients into two times and mix well.
5. Bake it in a preheated oven at 170 degrees (338F) for 30 minutes. When the top burns, cover with foil.

Make sure to use coconut powder with fine particles.
If the sweetener's particles are thick, it is recommended to grind them in a blender.
