Thanks shivesh for covering PUREZ...one important thing which needs stressing is to whip dairy cream in a stainless steel bowl kept on a ice pack/ trough...the peaks are tighter....customers end up using a glass bowl to whipp n success eludes them
I have actually done research and found that, 35% or more milk fat is required for dairy whipping creams to whip up properly and easily, they also have the right consistency for any baking needs. Indian brands mostly provide only 30% milk fat at max , which even if you keep the cream and the equipment for whipping cold , is still very hard to whip. You could get soft peaks at best, and to get to hard peeks u wud have to whip it for a very long time while keeping the bowl chilled in a ice bath. But non dairy creams do most of the tricks these days , so no complaints. Also if u don't like whipping creams, you could use a Swiss meringue to decorate too, as it has a similar taste and consistency to whipping cream, but is much harder to make.

There is also Milky Mist heavy cream which can be whipped. Amul fresh cream can also be whipped BUT you need to take the upper creamy part and leave the water.

Hi Shivesh, thank you so much for this. I had a question about storage, when you freeze the packets (1 or 2 ltrs) how do you thaw only the amount you need? Or do you thaw the whole thing and then refreeze it? While refreezing do you anything else other than closing the lid? I recently had a bad experience with freezing as the whipping cream was full of icicles when i thawed it in the fridge, and i had to throw it away :(

Hi Shivesh, thank you so much for this. I had a question about storage, when you freeze the packets (1 or 2 ltrs) how do you thaw only the amount you need? Or do you thaw the whole thing and then refreeze it? While refreezing do you anything else other than closing the lid? I recently had a bad experience with freezing as the whipping cream was full of icicles when i thawed it in the fridge, and i had to throw it away :(
