It depends on what you want to do/focus on in your career. I focus was on communications. It wasn’t offered as a class specifically for learning MATLAB when I was in SJSU, but it was extensively used in my communications classes - check out if there’s stuff similar to SJSU’s EE 112, 160, and 161. I did take a matlab specific class as it was offered at the community college that I transferred from (Laney College - ENGIN 77), so I would check there. Hopefully this helps. Oh and please get an internship if you haven’t done so already. I never had any internships and it hurt me landing jobs after I graduated.
Consider learning MATLAB independently, even if your current school doesn't utilize it much. It's a core skill for electrical engineers and can provide a significant advantage in your career. Most of the old timers built their softwares with matlab, so you will need to learn it to continue or change their work.

Take the initiative to learn on your own. It’s pretty easy to navigate. MatLab & Mulltisim are good simulation programs
