Human have to fight it wasn't because she's evil, but because everyone will die if she live. Even knowing human is fighting for their lives and planning to kill her, she's still trying to seal herself before got fully released. If think about the story in fate universe differently, to me it sounds like this: 1.Kids were using lego to build a lego city in front of their parent's bedroom door and give those lego man "life". 2.when mother looking for the kids she have to open that door and of course the kids got angry because the lego city got heavily damaged 3. "mother" become an evil to lego man, they decided to lock mother into her room forever. However a kid(final boss) who planning for something decided to distract other kid, he unlocked the door and letting mother out, mother is angry, so as the kids and those lego man in the lego city. This time they decided to kill their mother.
I hope they allow her to be summoned somehow in the future lik Kiara. That would be dope. They said in Babylonia she was unjustly betrayed so it would be a new chance for her after her revenge attempt.
So, what class would she be as a summoned Servant then? Personally, I think she'd qualify for either Avenger (angry at Humanity for forgetting about her and sealing her away) or an Alter-Ego (a version of Tiamat that loved Humanity more than hated it, and so fights to protect her kids).

now that the anime is finished i really wanna ask did she actually die or was she in the imaginary number space or void space again after defeating her and throwing her into abyss.
Hard to say, she was supposed to be destroyed in Babylon, but theories have come up that actually only destroyed her Beast body and she is still in the sea of imaginary numbers. Theories increased in the 2nd arc because Chaldea has to travel in the space of imaginary numbers and in one occasion they detect "something" inside the sea, nothing is supposed to be there so the fandom speculate that is Tiamat.
I think the last one, the children of Tiamat wanted the world to continue developing and for that they needed a stable ecosystem, which was impossible with tiamat out there generating new life randomly, she became unnecessary. In order to grow and become adults they had to rebel against their parents and leave their mother behind. That is why the name of the battle against Beast II is "Childhood' end".
