Ranch is less acidic and has similar qualities to buttermilk that may help tenderize. Did you try air frying? Maybe that would be better.

@@KristinStepp try using a different cut of meat. Cube steak needs to be cooked low and slow or quick and fast, kinda like chicken fried steak. Maybe try a piece of thin sliced ribeye or even a pork chop!!!

Dukes mayo for our household! For the cube steak, soak it in buttermilk for several hours to overnight before cooking. You can rinse the buttermilk off if you plan to season it differently or leave it on and dip in flour then cook. The buttermilk will tenderize it. Works for chicken as well.

I’ve also had issues with cube steak. I watched a video from Collard Valley Cooks where she made it. She said to only cook your cube steak for maybe 3 minutes on each side (if cooking on the stove). She said if you overcook it, it’s super tough. I followed her advice the last 2 times I made cube steak and it was tender both times. I think it’s one of those things that you either have to cook it fast or for a long time (crockpot) for it to be tender and anywhere in between it’s tough.
I normally pound out cube steak a 2nd time before cooking. I place it inside a gallon size ziplock bag and beat it with a metal spoon or meat tenderizer with a flat side. Try to get it even all the way around. It helps so much!
Whenever I cook cube steaks I always lay them in between a piece of wax paper or something covering over it and use something to beat on top of the entire meat to make it tender. It works everytime.

My tips for you for the cube steak. Bang on it a little with a meat tenderizer hammer and then put it in buttermilk. Pat dry and follow recipe as you did before. It should come out tender. I have used this method for the oven before and it works. If you don't want to buy a big container of buttermilk use 1 cup water and 1 tbsp lemon juice. Let curdle and then add to the meat.
Hey so a cool little idea for the bread stuffing. When I pull out the inside to make sandwiches I save it for a snack. I roll it up into a ball and dip it into a little tiny bit of Mayo. My grandma used to do that for us when I was a youngster, me and my siblings. So good!!

Hellmanns!! Between the 2 that's my go to. Lol but as a mayonnaise family we use different mayonnaise for different things. Kraft for tuna salad and chicken salad. Hellmanns for sandwiches. Dukes for potato salad and pasta salads 🙂 yes we eat lots of mayonnaise
Sometimes, if you let meat "rest" on your counter before you cook, it helps make it tender. I believe the reasoning behind it is that it allows the fibers in the meat to relax a little. I have done this with roast (10 minutes) and the results are fantastic!
For the cubed steaks, how I fix mind is I use flour and an egg wash. Heat some oil in a skillet/pan and season the flour with salt, pepper, meat tenderizerand garlic powder. Toss in egg wash then flour make sure heat isn't too high.

1000% Team Duke's!! I was introduced to Duke's years ago by family in Winston-Salem, NC and fell in love. We would bring several jars home with us when we would visit and family knew to bring a jar or two for when they would travel to the Hoosier state. I can not tell you how thrilled I was when Walmart and Kroger began carrying Duke's in NE Indiana!!

Easier step for Brusselsprouts; frying pan. Cut sprouts in half and add to the pan. Add about a cup and a half (eyeball it) of water and boil the water until it evaporates. Add butter and oil and caramelize the cut sides. Done. Add bacon bits, garlic, melted butter. Tfs
Cover it with a salad dressing and let it sit because that is a tenderizer. Do that in the morning and then cook it in the oven covered 3/4 of the time and then uncover it one quarter of the time to Brown the top.

I had never heard of it until I started watching southern women cooking...so it definitely must be a southern thing. I live in Ohio too & am curious about it but we were raised on Miracle Whip & I had never had regular Mayo like Hellman’s until I was out on my own! My mom made everything with Miracle whip. So I have both Hellman’s & MW in my fridge for different things!
Very nice recipes. Everything looks so good. I've actually never tried Duke's. I'm in Texas and it took a long time to get here. We do make a lot of chicken fried steak down here and soaking the steak in buttermilk not only tenderizes it but it adds more flavor. And when we fry the chicken fried steak we put a lid on it after we turn it over. Perhaps you could try putting foil over the dish for part of the baking and then remove it at the end. Or maybe start without the foil then add it after the meat has cooked a while. Covering it helps hold in the heat and makes meat a lot more tender. I love brussel sprouts too and I love how you change up the way you prepare them. Have you ever tried shredding them for a slaw? They actually turn out very good. Lots of great recipes. My Aunt taught me the best cubed steak that you can cyt with a spoon. Fry steak medium rare take up and drain, in the same pan make your gravy then put the steak back in the gravy and simmer for 25 to 30. Yummy 😋
Cube steaks are tough I like to bread in flour or cracker crumbs pan fry then I put into a gravy of golden mushroom soup beef broth and water and bake it takes a while to make tender in the oven.
was that pork cube or beef cube steak? the secret for either of those is to cook them fast. they are best in my opinion in a cast iron skillet with just shortening for your grease! you might pound them down with a meat mallot, that always tenderizes anything! tomato based anything will tenderize most meat. I make baked chicken fried steak on 400 degrees for 17 mins then broil for 2-3, as well as use panko bread crumb mix, with milk egg dredge and tiny bit of ranch mix... works every time...I'm a Texan so not frying is like sacrilegious but is a great healthy alternative 🤠
Yesss to the red wine vinegar! I recently made some of the same sandwiches minus the melting of the cheese but I sort of marinated my lettuce and onions in red wine vinegar and then when I assembled the sandwich, I still added the submarine dressing and it was 🔥!!

I wonder if your cube steak would have come out the way you liked, if you had done what you mentioned in the video....melted butter, poured it all over the steaks in the pan. Mine come out tender every time when I do a coating of melted butter except I cook them in the air fryer. My recipe is very similar to yours except... butter and an air fryer.

I keep blended raw papaya paste frozen into ice cubes in the freezer. Just throw in one big cube of it into your steak overnight and those steaks will come out even more tender than a fillet!

In Louisiana we only use Blue Plate mayo. We also buy a bottle of Tony’s seasoning about 3 times that size because we literally put it on everything.

If you let the cubed steak soak in buttermilk for several hours it will help tenderize it. As for the mayo, I’ve never tried Dukes, but I can say that I don’t love Hellman’s. We use Bama.
I like both. I lean more towards Hellman’s bc that is what my mom always used. My husbands family introduced me to Dukes. I’ll use either one.
Soaking it in milk definitely helps make the meat tender😊

Dukes or Hellman's or store brand if it is made with olive oil. I will use any of these but I think Duke's is the best. Thanks for sharing I think I will try the brussel spouts this way.

I make baked chicken fried steak on 400 degrees for 17 mins then broil for 2-3, as well as use panko bread crumb mix, with milk egg dredge and tiny bit of ranch mix... works every time...I'm a Texan so not frying is like sacrilegious but is a great healthy alternative 🤠

Yesss to the red wine vinegar! I recently made some of the same sandwiches minus the melting of the cheese but I sort of marinated my lettuce and onions in red wine vinegar and then when I assembled the sandwich, I still added the submarine dressing and it was 🔥!!
New subie! I usually beat up the cube steak with a meat mallet or stab it really good with a fork. Also I love to smother them in a beef gravy over white rice.
Dukes we use that my mom grew up on it and introduced me an my brothers to it my grandmother gets it all that time 💓

Of all the What's for Dinner youtubers, you are the queen of great, delicious, homecooking! We can always count on you to bring recipes that all levels of cooks can do successfully. I wonder if your cube steak would have come out the way you liked, if you had done what you mentioned in the video....melted butter, poured it all over the steaks in the pan. Mine come out tender every time when I do a coating of melted butter except I cook them in the air fryer. My recipe is very similar to yours except... butter and an air fryer.

I keep blended raw papaya paste frozen into ice cubes in the freezer. Just throw in one big cube of it into your steak overnight and those steaks will come out even more tender than a fillet!
Or soak them in Coca-Cola.
We don't have "Duke's" here so, we've never tried it. We like "Miracle whip"

A great dish with vodka sauce is.............Chicken Parmesan only made with vodka sauce.........so good!!! I even make Chicken Vodka Parmesan sandwiches on nice crusty rolls!! Fantastic dinner love the bushel sprouts.........I jus made them last night but will be truing these!!
