I dont dye leather by myself, i tried when i started leathercrafting but quite fast came out that you never dye the leather near the quality its dyed in tannery :)

No, i personally have no interest in bags, briefcases, i dont use them and this stuff isnt around me :) I like to create things i would love to use by my self :) With sneakers im struggling to find lasts and soles, as i have not the smallest feet (around 12UK/13US), last time i made a research and found nothing for that size :) So its still on hold :)

I like your skiving technique on the corners to fit the tee pockets and flipping the knife to skive the bottoms.

The detail with the angle on the pocket overlap is awesome. Its things like that the customer will never notice, but makes the end product so nice.

It depends on leather thickness you are using. Best way is to take scrap of leather and measure actual width
