The girls look happy So this pasta is stew meat, onions , olive oil (pancetta of some sort) and is that a white wine that makes kind of a meat sauce ragu? I’m gonna try this over the weekend I think
Maybe its because my family is from Abruzzo, but we add tomatoes or at least tomato paste to our Genovese so its a gorgeous brownish red sauce - and sometimes to be extra fancy I like to add spinach. :=8)
The Pasta alla genovese legend The most imaginative hypotheses have been made to justify the name of this dish, starting from the Genoese citizens present in the taverns of the Naples port during the 15th century Aragonese domination, by way of a genius unidentified Neapolitan gastronome nicknamed "o' Genovese". Stories also mention the famed Ippolito Cavalcanti who, in his 1837 recipe book, reports several "alla genovese" dishes, of which none unfortunately resemble condiments for pasta.
No carrots , no celery, your daughter is awesome at filming and commentary, go blue 👊👊👊. Simple and amazing. My only question. Since I follow this recipe every time, can I cut the onions the night before? If so, how do I store them... water?
Buongiorno Mr. Rocco, next time when you cut onions do not stand just above it...keep your face slightly back and you will hardly cry. Happy cooking e grazie per questo video.
@@forearthbelow ha! I definitely had a few glasses... i found medium heat was too high on my stovetop. The wine evaporated quickly, ended up using 2 bottles. Food came out delicious though!
Excellent as always David. Great recipes, easy to follow....but, that kid of yours is quite a downer. She doesn't have your enthusiasm, wit or charm. xox
I would like you to give us alternatives to using alcohol and pork in your receipies So you can reach to more international viewers who are not allowed to consume these items
