Pumpkin tends to be quite sweet and less dense than an an acorn squash, so it wouldn't be my first choice for a squash-based soup. But I think the idea is great and it will be an American Thanksgiving hit. I thought the pumpkin would collapse and leak after cooking but it looks great!
Are kabocha pumpkins available in grocery stores? I'm guessing that the pumpkin sold at Halloween / Thanksgiving might not work well. Other pumpkins or other squashes that might be good substitutes? Acorn squashes for a party of two?
Could you please replace bird flu chicken stock in tetra packs with organic vegetable stock ? It will taste richer & much more flavourful, thank you . . .

That was chicken broth, not stock. There's a substantial difference.
