      Chef Saito hmm I think it can overwhelm other things easily so you have to be balance carefully doing something like a sandwich, but it is still good. I think it may be best to feature it and let the meat speak for itself, such as in bbq

    Thank you for showing us the details about cooking beef tongue. Most videos just show boiling the whole tongue. Yours show how to handle it for BBQ.

    Best description I've and I've watched a lot. I was given ox tongue by our local grass feed butcher because former buyer didn't want it🤷. The only thing I thought I would do was turn it into cat food but already tried one, it didn't turn out too well. This looks like a good recipe 👍😊. I would have to say my favorite part was the tongue slapping 🤣🤣🤣🤣🤣

    Super helpful, in particular how to trim the tongue and the different characteristics of each part. Tadeonal we boil the tongue bevor removing the skin. I'm looking forward to try this as a barbecue. :D

    Nice job Chef! I need to smoke some tongue soon. Would you recommend I boil the tongue in really hot water to remove the skin or trim it the way you did? Thanks for sharing, it looked savory.👍🏼

      Hello Joe san, if I was you I would boil it in a seasoned water to make sure it has flavour. You can also cure is a day before and smoke it skin on. after smoking the skin will come off easy. Good luck my friend! show me your results!

    Im gonna have to give this a try, looks delicious. I love the simple sauce too. A friend just gave me 4 tongues... I cant believe how much they cost at the stores --- like $40 each

    So I work for Pedal Me and we deliver stuff for Swaledale all the time in London. Today we couldn't and now I have like 3.5kg of ox tongue......... This guy though, full of life! Thank you :)

    Thank you for the video! I was suppose to go to Sendai at May and saw all the "must eat" recommendations for ox tongue, unfortunately the trip must be cancelled. I managed it order ox tongue from a local butchers in London, they had to do a special order for me. Now with this video I am ready to prepare it for yakiniku 💪

I would say the key to prepare beef tongue is freezing it. It has to be slightly frozen so the knife can go in. Good luck! Tag me in your photos if it goes well!

    The method of removing the tongue skin is unique. I usually boil the tongue and the skin comes off easily. I liked the characterization of the tongue. Thanks very much. Do you know how to make pressed tongue? Would love to learn.

    Some of the most tender meat in the steer. People in the US just have to get past the fact that they are eating tongue. Another great video Chef.

      @@ChefSaito My fav way is to boil and simmer for 1 hour. Let them cool down in the liquid. Skin and rough chop for tacos....2nd way > Soup..

      I'm using a Gyuto (Japanese Chef Knife) but for this just use anything you are confutable with.

    Hey, thanks a lot for making this video! I recently went to a Japanese BBQ place and now I want to recreate the beef tongue at home. I have a quick question though. Does it have to be a BBQ style grill? I was looking at a Teppanyaki grill which I thought it might still do the trick too. Thanks!

      hello friend, thanks for checking out my video. You can definitely do this on an electric teppan. You can even do this on a frying pan if you want to. I would sudgest to do this on charcoal one day though. The smokiness will take it to next level. I also have a beef tongue steak video which might help you with the prep. Good luck and please don't hurt yourself prepping the beef tongue.

      @Joe Grizzly My restaurant in in Chelsea London. it's called Toko Sukiyaki Tei. We have Beef tongue yakiniku on our menu but unfortunately not as thick as what you get at Sendai.

      I love my tongue either Japanese or Korean BBQ style, unfortunately it can be hard to find in my part of Canada. I recommend tongue...it's delicious. Thank you for the video, Sensei Saito.

    Hi chef Saito, love ur video and I'd like to do it myself. Just a quick question, how thick do you cut your ox tongue for the thick cuts and thin slices for the bbq? Thank you. 🙂🙂

      Yes please try this at home! you might need some practice but if you do it a few times you will have no problem.
      You can cut the back side of the tongue up to 1.5 or even 2cm. don't forget to put Kakushi Cut which you can see at around 9:00. This is Micro scoring we do to make the meet tender.
      For the thin slice you can do 5mm.

    we usually boil beef tongue in broth to be able to remove the skin easily. can we do this prior to grilling? or need to use your method of removing skin?

    This video is a lot older than I expected. Just took a trip to Japan and my partner brought me to Negishi in Tokyo. I was hesitant at first but walked away feeling that Beef Tongue might actually be my favorite cut of beef now. I’ll have to see if the butcher shop up the road sells this cut or not.

    Thank you Chef Saito for your detailed video!!! I love beef tongue and it's my first time trying to prepare it for BBQ!
    Could you tell me how to cut the bottom for BBQ? Is that edible too like the front of the tongue and should be cut into thin slices?
    Also, do you skin the bottom off too? It also has lots of white stuff, I'm not sure if it's fat or inedible stuff. Do I cut those all away?

      Hi my friend, you can indeed eat the bottom part. it has a different interesting texture some people like it.
      Take all the white stuff and have it nice and cold so you can thinly slice it. some people marinate it the day before to make it soft as it's a bit chewy.

    2:37 it would all be tender if you cooked it or smoked it.. I guess the chewier parts would be more tender then the neck side because the connective would get soft

      I think I’m the world’s fussy eater. I’ve only had tongue at a Korean bbq. My favourite dish I think brown sugar glaze pork belly, also good on porter house steak

    GREAT video, FABULOUS personality... but i always cook my beef/veal tongue with the skin ON. It's sooo much easier. You give the 'skin' a good scrub with a vegetable brush, then you score the UNDERSIDE of the tongue (both prior to cooking)... then after it's cooked, the thick skin will peel off like butter!

    2:12 you need to be careful not to scratch your knife edge against the your knife steel ... that hurts your knife very bad.
    I’ll really suggest use a boning knife or use a more flexible knife on trimming this type of meat.
    Thanks for showing what to be trim off tho :)

      As you may know in Japan they have a whole different style of knifes. their knifes have a higher carbon and steel content and that makes it harder comparing to wester knifes. Not only boning knifes but filleting knifes are hard in Japan. I have a couple of videos about Japanese knifes if you are interested. cheers mate.

    Chef Saito, How long do you cook the slices of tongue? How many minute on each side?

      This is going to depend on how you like your slice but I will do something like 1 min one side 1 another and maybe add 5 seconds each till it's my desirable colour. Experiment and find your liking.

    Someone be honest... I'm not one to back down from a food that seems weird to eat, but I am a little hesitant. I'm sure the flavor is good but what about texture? I'm going to try some next weekend and don't want to be surprised lol

      Yes the texture is different to normal flesh meat maybe close to a hart. I will enjoy dont worry.

    Your cooking technique is rather interesting. I would have boiled the tongue to remove the skin, without wasting good meat. The other thing I'd do different, is not turn the meat more than once for each side. Makes for a more tender piece of tongue. Good video all around though.
