Creamy Chicken with Spinach & Feta Orzo ready in 30 minutes!

Ingredients
1 and 1/2 pounds chicken tenders or boneless chicken thighs
3-4 tablespoons olive oil
1 teaspoon salt or to taste (for the chicken)
1/2 teaspoon freshly cracked black pepper or to taste
3-4 garlic cloves, grated
1 small onion, finely chopped
2 cups dry orzo pasta
4 cups chicken broth
1 and 1/2 teaspoons salt (for orzo)
juice of 1 lemon
1 pound baby spinach leaves
4-6 oz feta cheese, crumbled
1 cup heavy cream or 1/2 and 1/2
1/4 teaspoon crushed red pepper flakes, optional
1 teaspoon crushed dried oregano
Instructions
Season the chicken on both sides with salt and black pepper.
Heat a large skillet/pot over medium-heat and add the olive oil and chopped onion. Cook until soft and golden.
Add the chicken and cook 4 minutes per side. Add the garlic and warm through until fragrant.
Add the orzo, broth, lemon juice, remaining seasonings, and salt. Bring to a boil. Reduce the heat to low and cover the pot with the lid. Cook for 12-13 minutes.
Add the spinach, feta, and cream. Cook 3-4 minutes until the spinach wilt.
Serve with lemon wedges and a salad. Kali Orexi!
Notes
Cooking times:
Chicken tenders: cook them 2 minutes per side.
Boneless skinless thighs: cook them 4 minutes per side.

This made a fabulous dinner for us this evening! I sautéed and added some baby bella mushrooms because they needed to be used up. Made a great addition but we’d love it as much without.
Although I don’t like cleaning chicken thighs (the veins make me squeamish), it’s our favorite choice for many chicken dishes.

I love all your orzo dishes 😋. How do you prevent orzo from sticking at the bottom of the Dutch oven and burning? I feel it is inevitable due to high starch content.

The heavy cream bonds with the oxylates in the spinach so it is good, I was hoping it had cream
