Hi Vidya, did you mean the steaming of the rice balls. As mentioned in the video, just steam them for 5 minutes in medium heat without pressure whistle (like Idly). And after that boil them in milk and jaggery at a low heat for 10 minutes before adding coconut milk. Enjoy cooking !

Hi John, Adding Jaggery to the milk is one of the important criteria in this dish. Few things which you have to be sure of is 1) using fresh milk , 2) using clean and filtered Jaggery, 3) Milk has to be brought to low temperature and then the Jaggery should be added gradually. Moreover, curdling of milk when adding jaggery doesn't mean the milk is spoilt and cannot be consumed further. Lot of our dishes like paneer, basundi, palkova is prepared by curdling fresh milk. Milk getting spoilt or curdled on its own due to its shelf life or natural external heat, is the one that is not fit for consumption. Hope this helps you:)
Simmy xavier Adding Jaggery syrup in hot milk or while on the stove will curdle any kind of milk, so allow the milk to cool down and then add fresh milk. You can put it on the stove again in very low flame and stir it well. Thanks for watching :) Enjoy cooking :)
