nice, thank you for the tips.. do you cover those with tin foil too? or just let them cook open like that the whole time??
Pork is simply covered over the tray beef on the other hand is wrapped in foil then in the tray.

Put a wire rack in the tray
That works too - I just hate cleaning them!
I'm guessing it just doesn't apply to foil trays, but could you use a heavier gauge tray? Say a stainless baking tray with a rack in bottom??
Absolutely however often hard to keep clean. I've used stainless steel hotel pans (chafer inserts) and those work great but again, need a bit of elbow grease to clean up.
Is that a pellet smoker?
i have always used a tray on my Kamado big joe never put the meat on the grill grates, apart from your video there is nothing else on this topic thank you.
