I'm also in the process of making a smoked turkey video that shows its effectiveness. It makes it much easier to hold a lower temperature, however there is radiant heat that comes from it, so that needs to be taken into account, however, that same radiant heat produces the flavorful smoke when the protein being grilled renders its' fat and it falls onto the plate. It's what makes this particular unit so versatile.
I know it's counter intuitive... But would tabs and a removable deflector plate be useful for really low and slow cooks?
