I wonder if everyone here can simply comprehend and accept the fact that there are, in fact, recipes of pizza without meat or cheese in them. The world is a big place with many things.
Look how fit Aziz is. Thin, and I am getting that way, too, being on a plant based healthy diet I chose so that I get healthier. My cholesterol dropped from 190, near high to 131, heart attack proof, in less than 9 weeks, so I was very pleased. That's on an all plant diet with no dairy / no meat / no added oils / no nuts/seeds. Mcdougall diet is very good and worth a try for anybody. I don't feel hungry much like I did all the previous times I dieted. This is a permanent diet change for me. Good luck to you all!
The sticky drop test at 4:08 depends on your batch size (that pesky net gravitational attraction thing), but probably for bench kneading, most batches range within a fairly narrow S/M/L/XL mitt spectrum, rather than ranging across the superjumbo hand-/stand-/floor-/cement- mixer spectrum, so it's probably close enough.
In Italy the pizza you will see most of the time is Margherita which is tomato, basil and mozzarella cheese. The pizza Chris and Aziz make is Marinara which is kind of the "let's test if the tomato and the doe are good" pizza.
If you ever get a chance eat at this guy's restaurant in Phoenix (Pizzaria Bianco). The house special with red onions and pistachios is freaking amazing.
I watched it without sound and it looks like they did almost nothing to the pizza and then put it in a fancy oven outside and that was it. Aziz also looks like he doesn't want to eat it.

The key to a great Pizza to me Is the crust. It has to be ultra ultra flakey cracker crust. More than just "thin" dough It has to be as easy as a soft cracker to break apart that how I like It. Mild tomato sauce , no spice whatsoever just sweetness ( it can't be bland but also not spicy ). The Sausage nor the pepperoni can be spicy either. The sauce should be sweet. I don't like brick pizzas that harden up even if they're thin everybody uses the same dough.
