  • 🌱(vegan) A small mini vegan series for those of you who want to eat less meat or are trying out veganuary! This is one of my favourite dishes ever and just so happens to be vegan - and if you’ve never tried indo-chinese food before this is the best way to try it out.
    6 Cloves Garlic
    6 Green Chillies
    2cm Ginger
    3 Tbsp Soy
    1 Tbsp Dark Soy
    2 Tbsp Ketchup
    1 Tbsp Crispy Chilli Oil
    1 Tsp Rice Vin
    1/2 Tsp MSG (optional)
    1 Tsp Corn Flour
    50ml Water
    1 Large Head of Cauliflower
    4 Tbsp Plain Flour
    2 Tbsp Corn Flour
    100ml water
    ½ Tsp Turmeric
    ½ Tsp Cumin Seeds
Finely chop the onion and dice the green pepper.
Take the leaves off the cauliflower and finely dice them. Pull the florets off the cauliflower and cut the stem into bite-sized pieces.
Bash up the garlic, chillies and ginger with a big pinch of salt (or finely grate), and save 1 tsp for the cauliflower.
For the sauce, combine the soy, dark soy, ketchup, crispy chilli oil, rice vinegar and 100ml water.
Make the slurry by mixing the corn flour with 2 tbsp of water.
Add 2 tbsp of oil along with the garlic, chilli and ginger in a hot wok. Fry for 2 mins then add in the onion, pepper, and cauliflower leaves.
Fry for 5 mins until softened and then add in the sauce. Bring to a bubble and thicken with the slurry, cook for 2 mins and turn off the heat.
Heat up a large pan of oil for deep frying.
In a large bowl combine the remaining cornflour, plain flour, turmeric, cumin seeds, cauliflower florets and stem, and saved garlic paste. Season with salt and toss well.
Deep fry the cauliflower until crisp and cooked all the way through, about 6 mins. Drain on a paper towel.
Meanwhile finely slice the spring onion.
Toss the crispy cauliflower in the sauce, sprinkle with spring onion and serve immediately over rice, noodles or on its own.

The new nigella! You can see the genuine excitement when you eat and talk about food. When watching other Foodies, they come across contrite. You’re genuine and when you make mistakes you’re so humble and take on feedback. Excited to keep watching your media platform and empire grow!
