People who comment that it is not rendang should watch the show first. The chef must cook a food using limited ingredients inside the guest’s refrigerator in a short time and he got inspired created rendang in that condition. I am Indonesian and I know very well that cooking rendang needs so much spices and takes much times. But why don’t you guys just appreciate it?
Agree. It's just a dish inspired by rendang. Any Indonesian or Malaysian can see that it's not exactly the authentic version but it's still a yummy looking dish. Sam has actually travelled to Malaysia before in a travel show....I believe he may have tasted rendang back then but probably didn't recall the name
Yes, you're right. This show is about creatively cooking a dish using only ingredients in someone else’s refrigerator. So there is NO luxury of choosing the correct ingredients for the dish. But by knowing the taste profile of the dish, good chef would be able to use other ingredients as substitutes to create a dish which has similar taste profile & textures as the original, may be even identical or at least very close. So anyone who comment this is not rendang is in a way correct. But the objective of the show is not to create the authentic rendang. If that is the case, then they would have provided every correct spices & ingredients, NOT someone else’s refrigerator.
Indonesia people love rendang and know the process takes at least 4 hours. but it's not impossible if it can be cooked in 15 minutes. it's good improvisation and looks so delicious 👍👍👍
As Indonesian who has been living abroad (Europe), I do feel the pain of looking for certain spices. Not all spices are available in local asia store near me. Sometimes....I just tried to get the taste as close as possible. No other choice. Great jobs for all the chefs... The fact that all these chefs know how to cook it....makes me teared up. 👍🏻👍🏻👍🏻 Good job!
Saya berharga kaka Bisa menikmati rendang one days... Dulu Aku juga pernah bermimpi bagaima hidup di negara orang terlebih Chinese ... Sepertinya Saya tdk Bisa menyantap rendang seperti idamanku.... Lama2 waktu Ada waktu Saya belajar membuat rendang yg Malay punya recepe ternyata rasanya lain..lantas Aku buat semua ingredients mirip Indonesia SBb ternyata di pasar basah banyak banget bumbu2 yang Sama... Setelah itu Aku buat.... Dan para tamu pun sangat menikmati... Saya kalau masak rendang 3 hari 3 Malam Baru enak ....

In Indonesia we use the tough part of the beef thats why it’s need to be cooked at least 8 hours (give or take), and we use alot of kind of spice/herbs (15 kinds at least) to make rendang.. so appreciate for the effort! It’s kind of cool to see someone cook rendang with limited spice/herbs 💜
The original minang use buffallo meat to make rendang. That's why need more time to cook and buffalo meat so perfect as rendang. We use beef now coz it's easy to find today.
That chef was really smart to use lemon peel as a substitute for lemongrass. At first I was kinda sceptical about it then I realized what was is it for. 👌🏻
Actually, if it's still yellow and soggy, Indonesia calls it kalio because rendang is usually cooked for 4 to 8 hours until dark in color, but I understand that it's only a 15 minute cooking contest with limited spices and ingredients. Good job chef
I'm Indonesian and I'm from Sumatra family (South and West) I know there is limitation spices in Korea and I appreciate it, as long as have explanation about how to cooking real Indonesian (West Sumatra) beef Rendang it would be nice but FYI authentic West Sumatra beef Rendang need at least 4-5 hours.
Rendang means a way of cooking in a long period of time. It can be beef,spleen, lung of cow, buffalo or goat, rendang chicken rendang or cockles rendang. Normally no sauteeing is needed. All the ingredients n herbs(so many to note here) are put together in one big wok.then the coconut milk n most importantly kerisik which a paste of pounded roasted grated coconut. Then simmer until almost dry n oily. .thats how me n my family cooked rendang for generations. Love from Malaysia
i bet that the taste look similar to me but you guys should try rendang with slowly cooked for 3+ hours so u can taste how tender and tasty just from the meat itself. Believe me, the more you chew it the more you like it.
I raised my hat for the Chef who can cook “Rendang” within 15 minutes👏👏👏 If the judges already give big nods like that for a 15 minutes Rendang, I think they’re gonna roll themself out when they taste a 8 hours Rendang with original recipe and spices😅

Itu emang konsep acara nya di kasih waktu cuman 15 menit dan masak dengan bahan yang hanya ada di kulkas bintang tamu nya jadi mereka di suruh untuk buat makanan mewah dengan bahan seadanya nah chef nya itu kepikiran buat rendang karena ada daging dan santan di kulkas bintang tamu nya jadi bahan nya terbatas dan gak boleh ada tambahan bahan lain selain dari kulkas bintang tamu nya dan sebenarnya semua chef di situ udah pernah coba rendang asli di Indonesia ada acaranya juga tapi lupa judulnya makanya ada chef yang bilang itu udah kelihatan mirip seperti rendang yang asli dan emang semua masakan di acara itu gak ada yang otentik bahkan masakan korea sendiri di acara itu bahannya juga gak otentik karena hanya boleh menggunakan bahan yang hanya ada di kulkas bintang tamu nya Soalnya aku udah sering nonton acara ini full di channel aslinya dan di acara ini juga yang menang rendang walaupun gak asli

Aslinya, rendang itu dimasak selama 8 jam dengan api kecil, potongannya juga besar2 bagian sapi khas dalam. Bumbu utamanya (dari yg saya tau) : Bawang putih lebih banyak daripada bawang merah, jinten, lengkuas (wajib), serai, daun salam banyak, cabe banyak, kemiri (supaya lebih berminyak),ketumbar (wajib), lada, garam, minyak goreng, coconut milk atau santan, daging sapi khas dalam.

as far as I know, in Indonesia, rendang is cooked for a very long time... until the meat is really tender and delicious... especially when eaten with green chili sauce and fresh cassava leaves. woooahhh can't stop eating.

Big mistake. Rendang mean slow cook. It can be rendang telur (egg) rendang ayam (chicken) rendang sapi (beef) or rendang paku (vegan). Should be more than 3 hours for name it rendang. It's embarrassed to being didn't know and showing to international viewers. Should change name, not rendang it's "Kalio" !
Aku tau ada beragam resep rendang, tapi baru kali ini lihat rendang pake lemon sama kulitnya 😂 Kemungkinan dipakein lemon untuk mengganti daun jeruk kali ya, mungkin disana susah nyari daun jeruk. Tapi mantap sih pada suka rendang, walau sebenernya disitu masih bentuk kahlua ya belum jadi rendang, paling enak dibesokin dulu terus dipanasin lagi sampe agak kering duh bumbunya bakal meresap banget😋

I'm from the Minang tribe in Indonesia but the dish is basically a Kalio. It's between a stew and rendang. You need a long2 time to make rendang. Even a lot of people in Indonesia said rendang eventhough it's more of a Kalio.
You guys REALLY NEED to try the original version of the dish. There are many variety of it, by the means of how the cook prepare it. The time, the ingredients. In this show, i can say, it's looks yummy enough for me. Since the original version have darker color and denser curry, me myself can eat only with steamed rice and the curry itself, simce the meals are so DELICIOUS!
The title should be "Indonesian's Rendang-inspired dish", just input 💖💝. 😅Real Rendang needs to be cooked at least 8 hours to 9 hours at medium to small fire. The spices needed may contain up to 25 kinds of spices. Well, IT'S CRAZY, you managed to cook that with veeeery limited ingredients in a very fast way. Waow! 🤣. Pretty hillarious. My highest appreciation.
At Indonesia, we don't add lemon skin in Rendang, but we add leaf of Citrus hystrix. It's has a special flavour. And we also add some Syzygium polyanthum's dry leaf

Dia gantikan lemon grass dengan lemon, itu lucu sih 😂 yang penting ada unsur lemonnya gitu yaaa.. tapi yah namanya juga dalam keterbatasan, asal orang-orang yang makan hidangan itu tidak menganggapnya sebagai rasa rendang yang sebenarnya, bagus-bagus aja sebagai perkenalan. It must be admitted that the chef is extraordinary at being able to cook rendang in a short time and Sam also admits that it tastes delicious. Because to be able to make typical Indonesian rendang takes hours.
Rendang has to be slowly cooked for 4 hours minimum. In fact we used to cooked it over 6 hours. Firstly because we use tougher parts of meat. Tougher meat part will give natural strong umami taste after being cooked for 4 hours, you can't find this strong umami taste on tender parts like sirloin how long ever you cooked it. Also Under that 4 hour, the meat won't produce that umami taste. Tender meat is easier to cooked but bland. Secondly, rendang has to be slowly cooked over 4 hours because you need the coconut milk to be perfectly caramelized. Fire control is the key here. Coconut milk has to be caramelized in medium heat in then slowly lowing the heat in exact measure for caramelization. If heat too high, you'll get burned caramel that give bad aftertaste in rendang. When you cooking rendang, spices is could be differs. But time and heat control is the key to make rendang. Even Rendang actually is not the name of dish, it's the name for how the way the dish cooked.
As malaysian, how insulting it is to see, not with proper ingredients, no proper preparings and definitely not the right people from Indonesia or Malaysia who shared the same similarities to Rendang, to guide them

Thank you for introducing Indonesian Rendang to the world, but based on the inggredients, the way they cook it, the color of the final result, it was definetely not the original rendang. Rendang need hours to cook (4-8hours), the color should be darken, and much more spices needed to cook rendang.
First part, rendang is malaysia, never indonesian. They copy from us. As indonesian hates curry. Secind part, there is no part of in the world rendang are cooked like that. Its a minimum 6 hrs dish to make

I also appreciate him with saying "he is a brave one" 🤣. Anyway, "heck" is not a bad word, it's only a slang word for exclamation of surprise and it's a soft version of "hell", not used for mocking others. It would be different if I used "f*ck". Itu emang konsep acara nya di kasih waktu cuman 15 menit dan masak dengan bahan yang hanya ada di kulkas bintang tamu nya jadi mereka di suruh untuk buat makanan mewah dengan bahan seadanya nah chef nya itu kepikiran buat rendang karena ada daging dan santan di kulkas bintang tamu nya jadi bahan nya terbatas dan gak boleh ada tambahan bahan lain selain dari kulkas bintang tamu nya dan sebenarnya semua chef di situ udah pernah coba rendang asli di Indonesia ada acaranya juga tapi lupa judulnya makanya ada chef yang bilang itu udah kelihatan mirip seperti rendang yang asli dan emang semua masakan di acara itu gak ada yang otentik bahkan masakan korea sendiri di acara itu bahannya juga gak otentik karena hanya boleh menggunakan bahan yang hanya ada di kulkas bintang tamu nya
Soalnya aku udah sering nonton acara ini full di channel aslinya dan di acara ini juga yang menang rendang walaupun gak asli

West Sumatera rendang:
4 tablespoon oil, preferably coconut oil
5 kaffir lime leaves (Indonesian: daun jeruk), remove the ribs
4 lemongrass (Indonesian: sereh), bruised and knotted
5 Indonesian bay leaves (Indonesian: daun salam) (*)
2 fresh turmeric leaves, knotted (*)
1 cinnamon stick (Indonesian: kayu manis) (*)
4 cardamom pods (Indonesian: kalupaga), crushed (*)
2 cloves (Indonesian: cengkeh) (*)
2 star anise (Indonesian: pekak/bunga lawang) (*)
1 kilogram (~ 2.2 lb.) beef shank or chuck (Indonesian: daging sengkel atau sandung lamur), cut into 2 inch by 2 inch cubes
800 ml coconut milk (usually 2 cans of coconut milk)
1200 ml water/coconut water
2 asam kandis/2 asam gelugur/2 black kokum/10 gram (~ 2 teaspoon) tamarind
Grind the following into spice paste
250 gram (9 oz.) shallots (~ 20 Asian shallots, or ~ 6 French shallots) (Indonesian: bawang merah)
10 cloves garlic (Indonesian: bawang putih)
100 gram (3.5 oz.) red chilies (Indonesian: cabe merah keriting)
10 candlenuts (Indonesian: kemiri)
2 inches ginger (Indonesian: jahe)
2 inch galangal (Indonesian: lengkuas)
2 inches turmeric (~ 1 teaspoon turmeric powder) (Indonesian: kunyit)
1 teaspoon coriander seeds (~ 3/4 teaspoon coriander powder) (*)
1 teaspoon cumin seeds (~ 3/4 teaspoon cumin powder) (*)
1 tablespoon pepper
1 tablespoon salt

Aslinya, rendang itu dimasak selama 8 jam dengan api kecil, potongannya juga besar2 bagian sapi khas dalam.
Bumbu utamanya (dari yg saya tau) :
Bawang putih lebih banyak daripada bawang merah, jinten, lengkuas (wajib), serai, daun salam banyak, cabe banyak, kemiri (supaya lebih berminyak),ketumbar (wajib), lada, garam, minyak goreng, coconut milk atau santan, daging sapi khas dalam.

as far as I know, in Indonesia, rendang is cooked for a very long time... until the meat is really tender and delicious... especially when eaten with green chili sauce and fresh cassava leaves. woooahhh can't stop eating.

Big mistake. Rendang mean slow cook. It can be rendang telur (egg) rendang ayam (chicken) rendang sapi (beef) or rendang paku (vegan). Should be more than 3 hours for name it rendang. It's embarrassed to being didn't know and showing to international viewers. Should change name, not rendang it's "Kalio" !

I'm from the Minang tribe in Indonesia but the dish is basically a Kalio. It's between a stew and rendang. You need a long2 time to make rendang. Even a lot of people in Indonesia said rendang eventhough it's more of a Kalio.
I like rendang too, beef rendang or chicken rendang are delicious. Also gulai, chicken gulai or goat gulai are also delicious❤️😋
You guys REALLY NEED to try the original version of the dish. There are many variety of it, by the means of how the cook prepare it. The time, the ingredients. In this show, i can say, it's looks yummy enough for me. Since the original version have darker color and denser curry, me myself can eat only with steamed rice and the curry itself, simce the meals are so DELICIOUS!
I appreciate the modification of rendang, usually I cook 1 kg meat w/ 3 extra coconut milk for 3 or 4 hours, they're do a great job

The spices needed may contain up to 25 kinds of spices. Well, IT'S CRAZY, you managed to cook that with veeeery limited ingredients in a very fast way. Waow! 🤣. Pretty hillarious. My highest appreciation.
At Indonesia, we don't add lemon skin in Rendang, but we add leaf of Citrus hystrix. It's has a special flavour. And we also add some Syzygium polyanthum's dry leaf

Rendang has to be slowly cooked for 4 hours minimum. In fact we used to cooked it over 6 hours.
Firstly because we use tougher parts of meat. Tougher meat part will give natural strong umami taste after being cooked for 4 hours, you can't find this strong umami taste on tender parts like sirloin how long ever you cooked it. Also Under that 4 hour, the meat won't produce that umami taste. Tender meat is easier to cooked but bland.
Secondly, rendang has to be slowly cooked over 4 hours because you need the coconut milk to be perfectly caramelized. Fire control is the key here. Coconut milk has to be caramelized in medium heat in then slowly lowing the heat in exact measure for caramelization. If heat too high, you'll get burned caramel that give bad aftertaste in rendang.
When you cooking rendang, spices is could be differs. But time and heat control is the key to make rendang. Even Rendang actually is not the name of dish, it's the name for how the way the dish cooked.

Thank you for introducing Indonesian Rendang to the world, but based on the inggredients, the way they cook it, the color of the final result, it was definetely not the original rendang. Rendang need hours to cook (4-8hours), the color should be darken, and much more spices needed to cook rendang.
rendang, meatballs(bakso malang) and red sauce (soup from Madura) are the 3 most delicious Indonesian dishes in my opinion.
First part, rendang is malaysia, never indonesian. They copy from us. As indonesian hates curry. Secind part, there is no part of in the world rendang are cooked like that. Its a minimum 6 hrs dish to make
rendang from Minangkabau tribe, and the Minang tribe comes from West Sumatra :)
