I am here to tell you that I have been making the sorbet sugar cookie since the first time I saw this episode and every person who has had it says its the best sugar cookie they have ever eaten in their life!
This is such a silly peeve of mine, admittedly, but I want Martha all to myself, LOL. No guests, no doggies sitting on stools, no young students visiting the set while the show is filmed. I had to confess. 😄

I wouldn't know, but people who use grams are out of touch with their creative/artistic side. They don't understand that originality and flare matter in the culinary arts, and they waste *way too much time* trying to get everything perfectly exact... They also tend to be people who never really learn about the ways the different ingredient properties interact with each other when the proportions are changed... This is why they loose cooking/baking contests. They can follow someone else's recipes perfectly, but it takes them forever to complete anything, and when something goes wrong, they haven't learned enough about the ingredients to know how to fix it. When the imperial system is used, rather than the metric system, people of all ages learn to "play with their food" and learn all about what works and what doesn't, through trial and error. The best chefs in the world learn the culinary arts under the imperial system.
Still wish I knew *how* to dutch cocoa. As it is, because Fair Trade Certified/EqualExchange cocoa matters so much to me, I don't really have acess to dutched baking cocoa, since no one seems to sell it as certified for non-human-trafficking. So, I would need to dutch the plain baking cocoa that I do have access to - but I don't know how. Help?
N'mind. I learned about it in the comments section on another one of Martha's videos. It's the one with the ice cream cake that has the sheet pan pieces cut out, frosted, then turned on their sides to make the walls around the ice cream center. Anyway, I'm using baking powder as my alkaline for dutching baking cocoa used in baked recipes that already call for both. It's been interesting to experiment with!
