I've used several different types in the past including the Twin Dolphin brand you can commonly find at Asian grocery stores. You can use any brand so long as they are not western chili pepper flakes. Otherwise you can also try this one too. amzn.to/3C6Mkfz
nice! Great to make a large batch .... I will not try to hold a wok with a galloon of hot oil in one hand though.... I do not trust my self like that! :) LOL
You can reduce the oil and pepper flakes and salt by 1/4 from what I listed in the description section. One gallon = 16 cups. 32oz mason jar = 4 cups. As for the aromatics that go into the oil, I would reduce them generally by half because for some of them like cinnamon sticks, you won't get any flavor if you reduce too much. Hope this helps!
