  • [Ingredients]
    Flour 180g
    Tapioca Flour 20g
    Salt 1 tsp
    Oil 1 tbsp
    Water 100 ml
    Soybeans 50g
    Jicama 300g
    Ikan Bilis 120g
    Fried Shallots Strips
    Minced Pork 200g
    Mushrooms 10pcs
    Shallots 2 cloves (Diced)
    Garlic 2 cloves (Diced)
    Light Soy Sauce 1 tbsp
    Oyster Sauce 1 tbsp
    Pepper ½ tsp
    Sugar 1 tsp
    Shaoxing Wine 1 tbsp
    Money Cai (Sayur Manis)

    00:10 How To Make Ban Mian Dough
    Use 180g of Flour mix with 20g of Tapioca Flour
    Put a teaspoon of Salt and a tablespoon of Oil in
    Ass 100ml of water bit by bit and slowly stir it with chopsticks
    Roll the dough into a ball
    Cover it with a cloth to avoid drying out and let it rest for 10 to 15 minutes first
    After 15 minutes, knead it with the root of your palm 25 times
    Cut it in two halves
    Cover 1 half with a cloth to keep from drying out
    Press the other half flat and apply some oil
    Fold inward while turning it around
    Repeat this action on the other half
    Let it rest for an hour

    Take 50g of Soybeans pre-soaked for 2 hours
    Mix it with 300 grams of Jicama and boil in 1800ml of Water
    After boiling for two hours, add some salt, turn off the heat, and set it aside

    Fried 120g of Ikan Bilis
    Add half of it to the soup base
    Deep Fry the other half with high oil temperature of 200 degrees for about 10 to 15 seconds to make it golden brown

    Prepare 200g of minced pork with 10 Mushrooms (soaked and cut into thin slices)
    Saute 2 cloves of diced Dried Shallot first
    Then add 2 cloves of Diced Garlic
    When you see that it has turned golden brown, you can put the minced pork in it
    Then put the mushrooms and sauté until fragrant
    Add the following flavourings :
    * Light Soy Sauce 1 tbsp
    * Oyster Sauce 1 tbsp
    * Pepper ½ tsp
    * Sugar 1 tsp
    * Shaoxing Wine 1 tbsp
    Stir well

    Squeeze it while washing to break up its fibers

    Flatten the dough with a rolling pin
    Then tear into pieces with your hands
    If you like thinner texture, just pull it to stretch it before tearing
    Throw the Ban Mian into boiling water, and put the Money Cai in it
    Once the Ban Mian surfaces, pick it up and drain off the water

    [材料]

    [做法]
    做板麵的麵粉
    麵粉 180 克加 20 克木薯粉
    放一茶匙鹽和一湯匙油下去
    放 100 毫升水,少量少量放同時用筷子慢慢撩
    搓到它變成團
    用布蓋著它,避免變乾,讓它休息十至十五分鐘先
    十五分鐘後
    用手跟按它,搓 25 下
    把它切成兩份
    一份用布蓋著,避免變乾
    另外一份把它按平,搽些油
    氹氹圈般向內摺
    接著再把它搓圓
    重複這個動作搓另外一半
    讓它休息一小時醒麵
    熬湯底
    50 克黃豆預先浸兩小時
    拿去跟 300 克沙葛淆湯 (水1800ml)
    熬兩個小時後加點鹽,關火,放到一邊
    準備配菜
    炸 120 克江魚仔
    一半加入湯底裏面熬
    另一半用 200 度高油溫翻炸大概10至15秒讓它變成金黃色
    炸蔥頭,也留起蔥油
    準備冬菇炒豬肉
    豬肉碎 200g 就用十個冬菇(浸軟後切成薄片)
    先把 2 瓣切碎乾蔥頭爆香
    然後把 2 瓣切碎蒜蓉放下去
    看到它已經變金黃色,便可以放豬肉碎下去
    慢慢用鍋鏟把它炒散
    接著便放冬菇下去煸香
    放調味料
    *豉油 1 湯匙
    *蠔油 1 湯匙
    *胡椒粉半茶匙
    *糖一茶匙
    *紹興酒 1 湯匙
    炒勻它
    準備薯仔菜
    洗的時候擠它,搣爛它的纖維
    煮板麵
    用擀麵棍把麵粉糰壓平
    接著用手搣開一塊塊
    喜歡薄的話,便扯一下才搣
    將板麵丟進開水裡,也放薯仔菜下去
    看到板麵全部浮起來,便把它撈起
    擺盤
    淋湯進板麵(隔渣)
    再加冬菇豬肉碎
    脆卜卜的江魚仔和炸蔥頭
    完成

    This Pan Mian is always my favourite. Home cook no MSG. full with nutrition.

      沒有沙葛的话也可以不放,但会少了蔬菜的清甜,沒有另一样可以直接代替它哦。
