How to cook slow cooker Roast Pork in a Crockpot with Crispy Crackling

  • This has to be the easiest way to cook pork.
    Juicy tender meat and crispy pork skin or crackling as we call it in the UK.
    Firstly you need good quality pork, the best you can afford. I bought this joint from a local butcher that uses locally sourced meat.
    Then, you need a slower cooker or crock pot and and oven. I use a ‪@CrockpotBrand‬

    Let's get going.
    First you need to remove the skin from your pork. I used pork shoulder. If you don't feel comfortable taking the skin off, ask your butcher where you buy the meat.
    Season you pork. Place large frying pan on the hob and get it hot. Now, sear your pork in the hot pan. Don't be tempted to add oil. Sear the pork all over. You're not cooking it, your just browning the outside.
    Once you have done that, pop it in the slower cooker turn it on and leave it until its tender and falling apart.
    Turn your attention the crackling. Turn on your oven and you want it HOT.
    Score the skin, but don't cut all the way through it. Season.
    Place it in a rack over a tray in the oven and let it cook until its nice and crisp. Keep an eye on it though. You don't want to burn it and create a smoke filled kitchen.

      Did you put the cooked rind on top of the roast in slow cooker? Or do you eat it separately. Thank you.

      Cook it separately and when you serve the pork, serve the crackling on the side.
      If you put it in the slower cooker it will lose its crispness and go soft.

    Good idea to cook the rind in the oven and the meat in the slow cooker. This way you get tender meat and a crispy crackling. The best of both worlds.

    When you put the pork in the slow cooker you said low heat for about 4 hours then turn it to high for 2 hours
    When you fetched it out you said you had it high for 4 hours then turned down to low heat
    Can you please clarify?

      Nicely spotted. Essentially you can't go wrong. Minimum 6hrs on low. You can go high for 4, switch to low for another 2 or until your ready to eat.

    Good luck with your channel. Had a peek at some of your vids. Some not bad stuff there. Also now I buy less meat but better quality with prices skyrocketing.

    Never ever oil the crackling. it turns to rubber. Leave it on the side to dry out then cook. Air fryer is best for perfect outcome.

      Thanks for the tip. It worked out well for me though. Haven't got an air fryer yet so will keep having it to do it like this

    I’m preparing to do this recipe! If my oven is gas what gas mark do I do the crackling please ?

      Hot. 7. Make sure it's pre heat before you put the rind in. Hope it turns out for you.

      Tha ks for the comment. You're looking at a minimum of 30 mins. The key is to get the oven hot and get it in. Keep an eye on it though, you don't want to burn it as it will taste bitter
