  • Complete recipe for Crispy Methi Mathari:
    Preparation time: 10 min
    Cooking time: 20 mins
    Serves: 8 people
    Ingredients:
    - 4 cups wheat flour
    - ½ cup semolina/ suji/rava
    - 4 tbsp ghee
    - ½ cup fresh fenugreek leaves/ methi
    - 3 tbsp cornflour and 3 tbsp ghee- make a thick slurry.
    - 1 tbsp carom seeds/ ajwain
    - ½ tbsp black pepper/ kali miri
    - 1 tbsp salt/ namak
    - Pinch of asafoetida/ hing
    - 1 cup and less than 1/4th cup water to make dough.
    Procedure:
    - In a pan, add 2 teaspoon ghee, add fresh finely chopped fenugreek leaves and saute for 2 mins.
    - In a big bowl add wheat flour and all dry ingredients as mentioned and make dough.
    - Keep it aside for rest for 20 mins
    - Roll a chapati and apply corn flour slurry (3 tbsp corn flour and 3 tbsp ghee), make layers as shown in video. Cut and deep fry in hot oil on low flame for 6-7 mins.
