Mom's potato cakes were really good but it was tough to have any mashed potatoes leftover with three boys at home. Just potatoes, egg, flour and seasoning they were great. Her mashed potatoes were great from the start though, you can't fix bad mashed potatoes by making potato cakes with them.
I bet there wasn’t a lot left over. Definitely starting out with a good mashed tater helps.

Advice from a Brit ... don't worry about the spelling, it's Wooster sheer or wooster shire. Accent on the sheer or shire. Either is ok. I actually don't like the stuff myself cos l think it's too sweet.
