      I’ve been noticing more plant-based dishes on the shows. Any time Becky is featured, you will probably see something fully plant-based or at least vegetarian. I wish one day a week (at least!) would be given to fully plant-based, non-dairy recipes.

    TIP (literally) - instead of breaking out the ruler, measure the tip of one or more of your fingers. The tip of my left pinky (joint to tip) is 1 inch and the fingernail is 1/2 inch. Makes it easy to quickly judge the size of that first cut.

      Exactly! So many people freak out if you suggest that they eat a dish without meat in it, especially when it's unlikely that they actually eat meat in every single thing, even if it's just breakfast cereal.

    I always cook and add the pasta separately, in any soup, so that it doesn't swell up and become soggy (not to mention 'drinking' all the broth) as the leftovers refrigerate. A tiny bit of oil keeps it from sticking together and I then store the cooked pasta in an airtight container in the fridge.

    I love that you're doing more vegan recipes, but having been vegan for 8 years now... here's my recommendations to make it better:
    1. You definitely need to add salt to the veggies, it helps draw out their moisture and flavor them. They need salt, too, not just the chickpeas
    2. Replace up to 1/3 cup of the broth with cheap white wine (thank Adam Ragusea for that tip)
    3. I'd replace the nutritional yeast with a small drizzle of soy sauce- it's easier to get the glutamate flavor that way; I want my soup to taste rich and umami, not to taste like cheese.
    4. A tiny pinch of turmeric helps with the color
    5. Add minced garlic and a squeeze of tomato paste 2 minutes before you add the water.

      I like your ideas, as I make vegetarian and vegan food myself. I would mince 3 cloves of garlic in the prep and add it to saute for a minute or two before I added the broth.
      Beside eliminating the nutritional yeast and adding the soy sauce (or tamari), I would also say that a couple of dashes of liquid smoke brings needed depth. Mrs. Dash (original) also adds more depth of flavor, and I tend to go half salt, half Mrs. Dash.
      One last thing I would change--adding uncooked pasta diminishes the broth level, so I cook the pasta Al dented, and then add it in the last few minutes of cook time

      I like these ideas for changing up or adding on to a recipe. I think some miso paste would add good umami flavor too

      I just made a similar comment and after I posted, saw that almost everyone else before me says the same thing. ATK needs to get with the times: people are making more plant based/vegan meals and ATK seems to be avoiding it.

And just what is the big deal with Goya canned beans? I buy them because they are consistently high quality, and a great American company. Who is Ron Popeil?

    Yay! No need to use chickens to make a delicious soup. I can vouch for the addition of nutritional yeast. It really adds cheesiness and richness.

      Edit: I checked, here's what I found - Consuming yeast does not involve animal exploitation and therefore, it is commonly considered vegan. Yet, strict vegans may still avoid eating this living organism. We can consider yeast as one of the accidentally vegan food ingredients as it is considered non-vegan by many level 5 vegans.

    An absolute home run! Thank you, Ashley! This recipe freezes well. I added a tablespoon or two of butter at the end. It took the flavor to the next level. I understand that butter is not vegan.

    I'm not a vegan by any means but I was intrigued by the simplicity of this ATK recipe so I tried it today for lunch - it's fabulous. A few weeks I also tried their pressure cooker chicken noodle soup recipe and that's also wonderful, but I may actually prefer this simpler chick pea version.

    Just made it and it is delicious. Substituted the nutritional yeast with dried porcini mushrooms (about 1/2 cup, maybe lil less, chopped), still worked I guess both have the same kind of umamimess; also had to do without parsley but I think the celery leaves, bay leaves and thyme give it such a depth that I didn’t miss parsley at all. This is such a simple yet tasty soup. Thank you! 😊

    My cholesterol is too high and my niece is cutting out meat, so I am trying meatless recipes. I made this soup as instructed. It’s ok. Next time (and I would make it again), I would put half the amount of chickpeas, more ditalini and more broth (since the additional pasta will soak it up). Might go a little lighter on the thyme, but I probably put too much. It is a good base soup that you can customize, just omit chickpeas and add other veggies and/or beans. Also, I used Better Than Bouillon vegetable. Good stuff.

    I made this dish using a slow cooker for 6 hours at high setting. I cooked the ditalini pasta separately in a pot until al dente since it would have come out mushy if I put it in slow cooker. I also added mushrooms for added umami flavor. It came out good. This is a keeper in my collection of vegan dishes.

    This was sooo good! I added some mushrooms and half a green bell pepper and only used one can of chickpeas instead of two. It was very good. The parsley at the end definitely adds a burst of flavor. One of my favs!

    I've just recently gone vegan(ish). This recipe is fantastic. I didn't have nooch. I used white miso. I so appreciate no faux chicken. No it doesn't taste like chicken.

    A question for the next info-question session. Why peel carrots as opposed to scrubbing them with an abrasive sponge? What is gained/lost by peeling vs scrubbing?

      Peeling is easier, especially if they are a bit hairy from being in the fridge awhile. And no water necessary.

    I have to be honest...I've never been a fan of the chicken in chicken noodle soup lol. I find it so bland. I already like chickpeas anyway so I'll have to try this. I also love matzo ball soup! Some people put chicken in theirs but I prefer not, just veggies.

    Looks great. Very similar to my standard vegetable soup, just with the added chickpeas! Just curious though, why didn't you just make your own vegetable stock from the ingredients that you were already cooking? I make vegetable soup all the time, and the mirepoix base is perfect to creating my stock. I actually throw in a parsnip (just one it's potent!) because it adds so much great flavor. This is a great base recipe, as so much can be added to it to go in so many delicious directions! Thank you, keep these videos coming! Would love to see more vegetarian/vegan friendly recipes!

      @@davidwilliams7935 that's a redundant idea. Firstly because this variation the lady has made is specifically to be entirely vegetarian/vegan. Secondly sure the chicken broth would add a more wholesome flavour but it's an absolute waste because in that situation obviously the person eating it is non vegetarian and not a single meat eater wants mushy high carb low protein chickpeas when compared to a high protein lower carb alternative in chicken breast.
