Here are a few things to remember if you are going to freeze dry hot peppers or spicy food: 1) protect your eyes, mouth and nose 2) good ventilation is key 3) wash everything that the peppers touch (sometimes multiple times) 4) if powdering, be especially careful with ingestion 5) for your following freeze dryer batches, do something you don't mind adding some spice to (just in case there is some lingering spiciness)
Jalapenos turn red when they are ripe. If you smoke the red ones they become chipotle peppers and you can grind them in a spice grinder for chipotle powder. I have been freeze drying peppers for a while now. You can smoke any variety of pepper. I just cut the stem ends off of small peppers and stab them with a knife in a few places and they FD whole perfectly.
I do pretty much the same procedures you do. I have a cheap garage sale Brinkman smoker which has no temp control, it's at 275* all day long. So I cut the peppers in half, clean out the seeds an ribs and smoke heavily for an hour with fruit wood, primarily cherry or apple. Then I freeze them and wait for the next FD run with an open tray. They come out really nice this way, and you could snack on the smoked red anaheims like some sort of spicy candy.
I probably would have a coffee grinder for just the peppers they are designed to catch the small powder when grinding the coffee so good for grinding spices or peppers
I’m glad you covered the hot peppers! I grow several kinds of reapers and scorpions as well as habaneros, jalapeños, anchos and others. (Habaneros are my favorite since they have such a fruity flavor with considerable heat.) When I freeze-dry them, I take the stem off, and use a paring knife to make one slit lengthwise, and just barely pry the two halves open so there is exposure for sublimation. In the end, the peppers look whole, and in a Ball jar, the colors are beautiful. One reaper heats a big Instant Pot stew a nice amount. I’ve considered powdering some, and I’m glad you provided the safety tips. Oddly, I enjoy the tingling on my fingertips after handling them.
As a woodworker, I build some of my own equipment. My sanding station and my copper plating station (I copper plate some of my woodwork) are good examples. Both the sanding station and the plating station exhaust away from me when I'm working at them and are game changers, with regard to comfort and even safety when working things at the stations. For example, you can watch the sawdust roll off a project, then do a ninety, before getting sucked down through the downdraft table. While eye protection is still a must, a respirator is no longer needed. Essentially, both stations are just carts with sides, a back and a top that surround three sides of the work area. This leaves no place for the fan or impeller to draw air, except where you are sitting or standing. The sanding station has a table with hundreds of holes in it (downdraft). The copper plating station just uses an in-line, variable speed fan. Though not even remotely as powerful as the downdraft table, which is "powered" by a 3 horse dust collector, it works so well that even when I'm working with liver of sulfur (a major stench), you cannot smell any of it, as its exhausted out a window via a 4" dust collection hose. In short, these are the ultimate processing stations for peppers, onions or anything that would cause you to shed a tear. That, perhaps especially, includes those times you find yourself grinding peppers into powders.
Next time consider running an extension cord out to the patio and powdering your organic napalm outdoors. Let it sit for a half-hour or so to settle before packaging. I think you already have a plan for packaging powdered peppers the next time. Masks and gloves are good! I used to grow habaneros, and they could clear out the house in no time when powdering. That was back in the dehydrator days.
Holy Moly Brian! Having a gallon of whole milk in hand is a great addition when powdering your hot peppers. In addition to drinking it, If you forget to wear goggles, you can actually rinse your eyes with water then with the milk. (We use a cold washcloth soaked in milk for a compress. ) and put it in a bowl to soak your hands. The casein in milk helps to break to bi FD of the capsaicin in the peppers. A Benadryl tablet before working with or eating then also helps a little. Great Video and glad you survived! 😃👍
Last year I grew some jalapenos that were a mixed batch. The older ones turn red and the smooth green are young ones. Depending on the plant stress and amount of times the plant dries out. That creates the "Heat" of the jalepeno. Look for stretch marks on the pepper running the length. Like white striations or flecks. Those are the hotter ones VS smooth green baby skin. "Mild"
I actually freeze dried a lot of serrano, jalapeno, and Fresno peppers. Most of them I ground in the blender with water, drained, then freeze dried. Easy to use in recipes.

So Just received my harvest right freeze dryer over the weekend and have my first batch of Carolina reaper habanero, 5:13 scorpion, Hungarian hots and Cayenne peppers going into the freeze dryer for its very first run. 🤞 Once done all these will be ground up and put in a shaker I keep on my stove I put that xxxx on everything Thank you for the videos ❤
Awesome. Make sure you clean your freeze dryer thoroughly after that pepper batch or do something that the spicy will compliment. That spice may stick around and infuse itself in your next few batches otherwise.
You might want to try letting your jalapeños turn red. If your tregor (sp?) slow smokes stab peppers to put a hole for smoke to get in. Smoke red jalapeños . Walk! Chipotle. If not all the way dry at this point dehydrate if bottling Chipotle in Adobe or crush.FD if you want to powder. P S I would poder the hottest peppers OUTSIDE.
Roasted green chili (with the carbon scraped off and veins removed) fanned out and stacked on top of each other with fajita seasoning (black and white) is the best thing I've freeze dried so far. Peppers are incredible in the freeze dryer.
Next time you have a lot of jalapenos make Cowboy Candy. Its a sweet spicy blend of jalapenos, sugar, vinegar, tumeric and other spices. It's something that can be water bath canned, but I'm curious if it would freeze dry!
I just pulled jalapeños out this morning. I was masked and gloved up yesterday. No mask today and I was coughing. Face palm! I did hatch and anneheim chilies a few weeks back. They weren't bad. The biggest issue I've had with cross contamination with flavor is with BASIL!!
I'm a FD newbie so I have odd questions - like - how long did that batch of 4 trays take? I have a 5 tray medium and planning to do a batch of end of summer peppers and celery and onions. My issues so far have been about timing. Any advise?
I freeze dried a bunch of peppers I had in the freezer, the other day. Should have worn gloves! My hands burned for two days. Cleaned out my sinuses too!!! Whhewwwwieee! 🤓 They all powdered perfectly. I used some tonight in my chili. I love having powders to cook with! 🙌

I saw your video on freeze drying coffee from various fast food joints, but can whole coffee beans (the beans you buy from the store ready to be ground) be freeze dried? What about already ground coffee? Would freeze drying coffee beans or ground coffee affect the flavor? Thanks!
We run into the same issues when freeze drying gallon jugs of Chipotle. Once it's in powder form, it's like a chemical weapon. You can't breathe in the kitchen without coughing, choking, and snotting everywhere. Although it's worth it in the end.
When I process a lot of hot peppers I submerge them under water. I also don't like using gloves, so I rub Cisco into my clean, dry hands. It keeps the pepper oils from getting down into my finger prints. Then the soap will lift it all off my hands.
Honestly I think your kids were smart doing this imagine a situation where you actually needed to eat your freeze dried food for a couple years seasoning would be nice!

Yes but you wear out your motor doing that. The best thing to use is the milling attachment on a Kitchen Aid

You should roast the Anaheim chili pepper’s and remove the skin first before cutting and dicing the pepper onto the tray to freeze dry them.

Seeds typically have a lot of nutrition, but I'm not sure how much it would matter for something that is used as a spice.

Q. When you put your peppers in a canning jar do you have to put a oxygen absorber in there or do you just vacuum pack the jar?
If it's powdered it will last many years without an absorber. Try to keep the amount you are using often in a small jar or container.
