  • Peppers are a flavorful ingredient in many of my basic recipes. They are on my top list of foods to store along with onions, carrots, and celery. We freeze-dried some peppers from our indoor garden and they are amazing!
    In this video, we will share how we freeze-dried both sweet and hot peppers for our long-term storage. We rehydrate the peppers and used them in a batch of delicious fried potatoes.

      @@Eyes2C. Thank you for letting me know. I can hardly wait til it gets here....smiles I've been dehydrating, freezing and canning since 1965. Am 73 now and alone, so I'm really looking forward to it, it's getting harder to plant and maintain my garden, plus toting around those cases of canned food. I upgraded from the med one to the large one... my daughter is dying for one too so this will be hers one day smiles...plus she can use it now too...Take care and stay safe. God Bless

    I rehydrated some hash brown potatoes this morning. 12 minutes in boiling water then pour off the excess. Then I started cooking in a skillet in olive oil. After a few minutes I added FD onions and peppers. I did not rehydrate either first and they dehydrated just fine while cooking. Potatoes came out great. Excellent flavor.

    W/O even watching the vid all the way through i wanted to say I absolutely love to cook w peppers. They add great flavor and colors, even w the hots. The look on Jonathan's face when he crunched the hot pepper was totally "thats good".

    One of my favorite ways to use jalapeños is to make cowboy jelly, then of course there is always chilli.

    My hubby ordered my FD on Vday. They told me it wouldn’t be here till late April. Its being delivered on Sunday!!! Yay!!!! Can’t wait to try this P.P.! ❤️

    Thanks for your honesty! I just got a freeze drier and did a bunch of peppers and onions. When I added some to chili I found it to be like eating soggy styrofoam. Flavor was great but texture was off. Same with the peppers. I’ll have to try frying them in a recipe next!

    I'm a "wimp" about hot peppers also but I love mild salsa, chipotle pepper bean dip, and red and yellow peppers :-)

    I love your videos because you go through almost everything from start to finish. However, will you please include the temperature and if you pre-freeze the food in your videos? It would be a great help!

    I prefer to make hot sauce in order to make my peppers shelf stable. Blend, add salt, and let them ferment for 2 to 4 weeks, and finish it off with apple cider vinegar.

    You may try to roast the peppers. That improves flavor and without the skin you may not have as much texture problems. The only issue I have with roasted hot peppers, is they can become hotter with roasting.

    Do you blanch your peppers first i heard they lose the color over time if they aren’t blanched

    I can't get a freeze dryer but I may have a go at growing yellow bell peppers. I recently found out how sweet they are. Not a fan of red; there's something in the flavor that just tells my brain this shouldn't be in my mouth...

    hi do you think it is worth getting a freeze dryer if you a vegetarian, i don't eat meat, eggs, fish or chicken and have a good size garden and was wondering your opinion thank you and great video.

    I just opened a mylar bag or raw sweet bell peppers that I did 1 1/2 weeks ago. I used a mylar bag and a 300cc o2 absorber. I also have a gadget that tells the temp. of food comng out of freeze dryer which indicated above 104 degrees of heat. Now I'm checking packages and find soft and squishy. I opened up packages and find peppers
    soft and moist. I have a boat load of peppers in my garden currently. Any thoughts as what I am doing wrong or what. I use 02 absorbers of 300cc and my content is only 3 cups of peppers. Thank you.

    I use my hot peppers for jerky, if u freeze dry jerky, does it work or do u have to rehydrate the jerky?

    FYI poblano is fresh, ancho is dried. So these are poblanos to start with but when freeze dried, do they become ancho? Probably not considering when reconstituted they go back to poblano.

    My biggest question...Can non food items be freeze dried? I would like to freeze dry toiletries for my 72 hour kits. Things like shampoo, conditioner, mouthwash, toothpaste etc. No one with a harvest right has addressed this question and I'm curious. Love your channel.

      @@TheProvidentPrepper No, we haven't even purchased yet. We are apartment dwellers and don't have a dedicated 20 amp outlet. We are looking to set up at a good friends house in exchange for use of the dryer. I was just looking for ways to lessen carry weight in our 72 hour kits. LOL, it sounded like a great idea but I can see the potential problems. Thanks for your help.

    Since you can freeze dry peppers and they are just like fresh when reconstituted are you still going to continue growing those indoors? Just curious and spinach can be freeze dried too? Thanks for sharing

      @@TheProvidentPrepper That's wonderful. I just started growing a few things for the first time this year and we are just getting a frost warning tonight! Our last frost date was supposed to be early Feb. I have tomatoes and strawberries already planted. Hopefully it will become therapeutic for me some day...ugh

    Do you find any issues with bugs growing inside? If so how did you deal with? I started a few plants Inside in the fall and had to abort because of bugs, nats etc. Love your videos by the way. Thanks

      I use red man chewing tobacco leaf in an old sports drink container, water and a little hand soap, shake well , never have nats or bugs again...

      just pour on top of soil
      the bubble kills right away
      tobacco keeps all bugs away
      i just keep the bottle around keep filling with water

    I can't afford a freeze dryer, but is dehydration a good way to store peppers?

      It just won’t store nearly as long. Look up storage methods and times for dehydrated foods. Freeze dried food in proper packaging (Mylar bags) and oxygen absorbers can be stored for 20+years.

    Nope, those extra oxygen absorber are going to go bad if you don’t vacuum out the air. Remember oxygen is what activate them and just because you close the lid doesn’t mean there’s no oxygen in there, when there is.
