FULL RECIPE LISTED BELOW
Irish Apple Crumble
INGREDIENTS
4 Bramley cooking apples (or what ever cooking apples you use)
¼ Cup (2oz/50g) granulated sugar/ caster sugar
(150g/6oz/ ¾ Cup) plain flour (also works well with gluten-free flour)
¾ Cup (3oz/75g) salted butter, cold
¼ Cup (2oz/50g) granulated sugar/ caster sugar
1 lemon juiced to stop the apples turning brown
METHOD
1. First, you need to prepare the apples. Core and chop the apples into 1-2cm chunks.
2. Put the apples into an ovenproof dish. Toss in some lemon juice juice to stop it going brown. Sprinkle over the sugar
3. Place the flour and the sugar in a mixing bowl. Add the butter and use your hands to mix rub in the butter until the mixture resembles large breadcrumbs. Pour this evenly on top of the apple.
4. The crumble topping can be made a day in advance and it can also be frozen.
5. Bake the crumble at 180C/350F for 35/45 minutes or until nicely browned on top and the apples are bubbling. Eat hot from the oven with whipped cream. Enjoy!
Love this video! Love when your mom said “there’s no such thing as bad weather only bad clothes.” In Alaska there is a lot of truth in that. Lol.
Lol! Thank you for sharing, Alena.
Awww “food and eating is our hobby”....my family, too! It’s so sweet to hear and see this and what a wonderful gift food and generational recipes are!
oh my gosh Gem, I love this! Such a pleasure to watch you cook with your mum, you look just like her! Food is the hobby in our house as well :) The recipe of course looks delicious as always!
Mind Over Munch Thank you Alyssia! We had a lot of fun making this episode. After going home for the holidays, I think food is more like a sport in my family. We ate so much! :)
So, Gemma....here we are now in October 2019 and it was my turn to fix a dessert for a get together after church, and this is perfect for Pennsylvania apple season. When I uncovered it to put on the table, a little boy said, "oh...it's an apple crisp!" and I replied with a cheeky grin, "well, actually it's an Irish Apple Crumble. I learned how to make it several years ago on RUclips from a lady to went over to Ireland and made it with her mom at Christmas time", to which his mom replied..."Irish?? as in 'Bigger Bolder Baking'?" We both cracked up laughing! We L-O-V-E your recipes!!
This is hilarious! Great story!
Yes.. my cake fairy and her queen !!

Lillian Niyazov Yes, it was a bit of a grey day but the view is always lovely.
You guys are so cute together! She is exactly like you. Pretty, sweet, and bold😀 please do another recipe with her
Aw, thank you for your sweet comment :)
Apple crumble has always been one of my favourites, and my speciality when I was a chef. I tended to cook the apples before in a pan, but I once had no choice but to use a sweet apple instead of the Bramley. I really wish I knew the name of it, because it broke down well, and tasted gorgeous. I didn't need to put as much sugar in the mix and it tasted more natural and appley. So since then, I've been trying different varieties to see if I can replicate it, but no success so far.
Also, quite by accident, I burnt a pan of sauce, but loathe to throw the lot away, I just scraped the uppermost off, and found it had a caramel type flavour to it. Wonderful. But I don't recommend ruining a pan every time you want to achieve this. Since then, I've tried to add in some caramel, but never yet achieved the same result.
My crumble, though, I think I have mastered. I use brown flour, soft brown sugar, and oats, and before it goes in the oven, I sprinkle some Demerara on top to caramelise and give it a light crunch.
You are your mammys double!! Great recipe
My nanny had thier pirex dishes too!
Oh memories
DarkAndiel You know, I never realized until now. I thought I looked like my dad. I'm taking that dish back with me to the states :).
This is probably my favorite episode here in your channel.
+elira patco Thank you so much, Elira. Really glad you like this video :)

OH Gemma your mother is beautiful and so is this video, you and your mom made this video as yummy as the apple crisp looked. Thank you for including us into your holiday. I can not wait to try this recipe!
yum and yum, two left handed Irish angels:)
Aw, thanks so much!
In my family we usually put a bit of cinnamon and mixed spice in the crumble and it is delicious!
Emily Painter That's a great idea, Emily. Cinnamon and spice always adds a nice warm flavor and it's so good with the cream. Thank you for watching!
I love that butter
we use that butter in our house too. Adrian told me it's actually paleo butter? Who knew. Your mom is so cute!
Lovebites really?, I didn't know that. it is such a gorgeous butter, especially for baking. Glad you liked this episode Cassandre.
Exact same recipe I used in school in London except we added mixed spice. I followed your mother’s instructions today but used unrefined brown sugar and tweaked the topping by adding some ground almonds and a few crushed walnuts. It’s lovely but sometimes poignant how dishes evoke memories. Thank you.
Ria, that is so lovely to hear. You probably had the same cookbook at school too. It is easy to tweak this to suit your taste too. Add an egg and you will have a cobbler, delicious too :)
Yes, I strongly suspect I did. :) I haven't made a cobbler in a few years but will try with an egg substitute for a change. Thank you for the idea and your fabulous channel.
Irish butter is the best butter!!
Lila Kell It sure is, Lila! :) Thank you for watching. :)
In Norway we almost have the same thing! But we have breadcrumbs, apples and cream.
That's awsome live in the States and that's how I bake it also.
Basic crumble. In the US we use Granny Smith apples, and some people add brown sugar and oatmeal to the topping, and nutmeg
The original bold baker and the new bold baker

hawaii door Aw, thank you so much for your sweet comments :)
Exactly how I like it 😊 same as my mum made growing up though we use different apples. Our apples are naturally quite sweet so we use very little sugar.
Ah! that is so nice. Yes, the apples we use for this are very sour, you really could not eat them in your hand, but they are delicious when cooked with sugar. I am happy that oyu like this one :)
I made it! With additional raisin!! Thank you simple deader after dinner!
Mae Cheah right on! great addition. I'm delighted it worked well. Thanks for trying it out :)
Luv it Merry Christmas Gemma and Mrs Stafford xx

Hot Chocolate Hits Thanks so much, Vedika! We had a great time together, and it was our first time filming in another kitchen so that was a lot of fun. We have one more show from Ireland coming next Thursday. I hope you had a great Christmas! :)
I love your mum! She looks like a great and patient teacher!
Should have said and I'm from and living in Co.Mayo, which for those that don't know is in the West of Ireland. Traditional food and ingredients are the best, noting like home cooking and baking worth all the work
Hi gemma just made it and we loved it ,,, thanks a ton
Love the view from your kitchen! Marry Christmas
Yang Wang isn't it nice. I was hoping there would be some cows out but not that day. Happy Christmas :)
i literally dismissed apple crumble for most of my child hood cuz i was more of a chocolate type of girl but i finally got to making it and it tasted REALLY good so thank you Gemma you got me trying more varieties!!!
That's great! Definitely one of my favorites.
This is so cute! ❤️
Great Video, thanks a lot for sharing! Best wishes to you and your lovely mum.
Martin Loigo Thank you for watching, Martin! I hope you're enjoying my baking videos. :)
I made this for Samhain (Halloween) dessert the other day and it was absolutely delicious! Everyone loved it, and my ancestors also seemed to enjoy the serving I left on their offering plate. I will definitely make this again and again.
Wonderful! Thank you for trying it out, Alicia!
Dear Gemma, your Mom is a gem herself--such a natural sweet personality. I just discovered your channel, and truly appreciate your beautiful championing of Ireland. I loved the fact that it felt unnatural to your Mom --that's how I read it--"nobody to share it with," and then again at the end "remember to share it..." . Wow!
You are very gifted and very smart to appreciate your heritage--I do hope you kept the Catholic religion that produced all this culture and vitality and your happy childhood--so wonderfully shown by your Mom. God bless you and your family!
awesome!!
Ana Marin Thanks, Ana!
hi gemma!!! i love your baking.. i hv tried your apple crumble recipe n it was awesome.. tq for the awesome recipe.
We have a Granny Smith apple tree in our garden and is very prolific. Lots of apple pies and crumble and put in the freezer for winter! Lots of fresh cream but I like a bit of sweetness. I also add a few seeds of vanilla. Love from Auckland New Zealand, mid summer here and gorgeous blue skies!
Sounds great! Thank you for sharing.
Happy holidays for you and your family!!
osita dominguez Thanks so much! To you as well. :)
thank you!!! :D
I love Kerrygold butter, I am from the Caribbean 🇹🇹 and I grew up eating Kerrygold butter. I love all your recipes 😍 and love seeing you judge on Nailed it ❤️
Thank you so much for your support ! Feel free to search for recipes you like on my website www.biggerbolderbaking.com.
Your video hit my heart: I have my Aunt Eileen's handwritten recipe for Apple Crumble but I've never made it because my Mom always made Apple Crisp. You and your Mom make it look so easy that I will try it when the McIntosh apples are ready this month.
Aw. I can't wait to hear more about your results. I hope this will help you relieve those memories www.biggerbolderbaking.com/irish-apple-crumble/
And gemma when you said realy good ingredients and I'll add really good love

It's making my mouth water :)
That looks delicious
Thanks so much!
You and your Mum are so sweet together and beautiful, too! I grew up with that same casserole dish, too, and I actually have three of them right now. There are some dairies here in Pennsylvania, USA, where we can buy cream and butter from grass-fed cows, and it's so very good!
Thank you so much for sharing! I love this. Glad to have you with us :)
Its so cute to see a mother-daughter cooking video. I can see the beauty in both your mother and you! She looks so nice and sweet!
That was nice. Loved your mom.
Merry Christmas!

Your mom absolutely rocks that hairstyle, Gemma!
Berke Yeniev Ha! I'll let her know. Thanks!
Finally! A truly original crumble recipe. Been looking all over, but none looked just right except for yours.
Thanks.
I'm delighted you liked this, Iffat. Here's the recipe www.biggerbolderbaking.com/irish-apple-crumble/
I always put cinamon and nutmeg in my crumble , aswell as using light brown sugar. You can also add vanilla extract, which tastes really good.
Thank you for sharing, JCF.

Emma Lovisa Happy Christmas to you and yours, and thanks for watching!
I needed some " baking therapy" after a stressful weekend doing assignments. So i decided to try this recipe- the therapy is starting to work just by smelling it baking ☺ It should be ready in 10 minutes , mmmmm, i can't wait😜
This recipe is so simple and easy to make and absolutely delicious 💗 I tried it today and everyone in my family loved it. Thanks for the recipe. Lots of love.

We made this last night and it is sooo yummy. It's a cross between shortbread and apple crisp. I'll be making this again and again. So simple and so good. Thank you!
MustardSeedish So great to hear that you enjoyed it! Yes, the crumble topping has a warm buttery flavor. Thanks so much for watching!
Love your recipes! I'm trying this for my dad's birthday :) Greetings from la Patagonia- Argentina
+Majo Bordón Thanks so much for watching. Let me know how yours turn out :)
How is the result? Tell me please :)
Thank you GEMMA and your MUM for sharing this receipe..looks delicious! 😊
Wow 👍🏻👍🏻👏🏼👏🏼 re-watching both lovely ladies 💕💕 made me smile : ))
Thank you for the kind words.
Wish I found this recipe before i started making it. Why i like this recipe so much is, because you gave measurements in gms as well as cups. I just prefer following recipes which uses cups measurements, so easy. Oh yaa, forgot to mention, i love Kerrygold butter a lot. When i make Ghee( clarified butter) which we use in Indian cooking from this butter, it turns out just like my mum used to make in India from churning cream and then butter and finally Ghee.
Glad you liked it! Thanks for sharing this here.
Your mom seems lovely! :)
Merry Christmas to you and your mom by the way tis looks really easy I think I am going to try it thanks for this recipe
love cooking love hairstyling Thanks so much. It's a really simple and lovely recipe. I hope you enjoy!

I made it, add some vanilla to the apples, and belive me it was DELICIOUS!!!!
I'm going to make this for our Christmas dessert :) Thank you so much. Merry Christmas with all it's blessings
Thanks a million. Happy Christmas to you too!
haha I would agree with your mom's statement that there is no bad weather only bad clothes but until just a few days ago here it was -45 to -55 C with white out blizzards every 2 or 3 days. Definitely the time for plenty of hot food and not going outside
Oh, my Mum would never have experienced those temperatures, Ireland has a very moderate climate, hardly ever below freezing, or above 25C - lots of rain though! :)
Gemma Stafford oh goodness that sounds heavenly
