It was kind of (emphasis on kind of) dumb move to actually use that Quick attack against the originals though.
More than anyone else, Karasuno especially Hinata and Kageyama (we could include Tsukishima) knew their "freak quick" isn't invincible. They have been countered numerous times already especially by Dateko. So they knew already how to counter it. And even if they use it at the time where all of them are already tired, Hinata and Kageyama are those who to refuse to give up.
But its metaphorical to the teams motto "don't remember the memories" or whatever. They kept pushing ahrad getting more crazy and creative with their quick, meanwhile Hinata and Kageyama could look back on the memories and how its gotten countered before
