How to Make Stove Top Kettle Corn at Home

  • A salty and sweet snack. A simple recipe to make stove top Kettle Corn at home.
    1/2 C Popcorn Kernels (100 g)
    3T Granulated Sugar (35g)
    3T Oil (30 g) - use a neutral oil, such as, canola, vegetable (soybean), corn. Peanut or coconut oil should also work.
    Salt to taste

    I'll have to try it. when i pop on the stove i like to start the oil and put just 2 or 3 kernels in the oil and let it heat until they pop and then at that point i dump the rest of my kernels in, i also only use medium heat i have found the hotter popping temperatures gives tougher texture when it's done, that and trapped steam, always let the steam vent otherwise it steams the already popped corn and makes it rubbery like a bagel. as always have your bowl ready to dump it out right away as soon as it stops popping.

      I used coconut oil, think I should of used regular cause it doesn’t taste like the kind you get at the fair.

      @@tinahuttner7280 For Kettle corn makers at the fair use regular oil. Coconut oil gives more of a movie theater taste to popcorn.

      @@melodypedals4827 I've added info to the video description. Basically you want to use a neutral oil - vegetable, canola or corn. Recently, I've been using coconut oil to get a movie theater taste to the kettle corn. Stronger flavored oils lik Olive oil might be too strong for kettle corn. I hope that helps.

      @@Astavyastataa lol yeah... I was just going with the flow and being funny. However, the more I think about it getting gas delivered or piped to the house is dependent upon your local utility. I personally prefer cooking with gas. Everything in my area is electric.

      I'm glad the recipe worked out for you and I can provide some useful content to someone. The fair is always fun, but making kettle corn at home you get the freshest batch all the time. Also, there's always the thrill of the questionable rides where your seat is being held by that one old (?) bolt and there's corn dogs. However, I am working on a corn dog recipe. Cheers!

    OK I’ve tried making kettle-corn before and it seems like one of those things that’s really really easy to do, but it’s also really really easy to fuck up. This video is so straight to the point it’s literally full proof. Thank you for posting

    I tried this recipe for the first time, it came out great I just made sure to lift the pot over the heat and shake it when it started popping, it didn't come out burnt it was perfect.👌 I used 3 table spoons of oil and 1/2 cup of kernel and 3 table spoons of sugar.

    Just made it! The sugar started to crystallize from too much stirring but when I left it alone for a sec it turned a bit yellow and I threw the kernels in and just shook it as it popped. Best fresh kettle corn I’ve had!! ❤

    Used this recipe but made a smaller portion (1/3) and it came out delicious! Perfect combination of sweet and salty for me as I've been trying to reduce my sugar intake.

    You sir, are a genius! 🍿🍿🍿🍿 I just made it, and it's perfect! Not one burnt one, and zero unpopped kernels (loose in pan), ⚠️**but there are some unpopped kernels stuck ONTO some of the popped corn, so be careful you don't mess up a tooth crown!

I found that putting the oil, a test kernel, then when that pops, add the rest of the kernels, close the lid, and move/shake the pan around, then add the sugar, then proceed with the shake process, and as soon as popping starts to slow, turn off the heat/remove from burner.

    Yea I just tried this n dam it was pretty good it only takes 20 sec to cook as soon as it stop rapid popping dump that whole pan out into another pan literally within 2-5 sec of it stop rapid popping like I said as soon as the first 2 pops go off put the lid on and shake for 20 sec or less is all it takes soon as it stops popping fast dump or u will burn it u gotta get it out the pan instantly into a cool bowl or cool pan and shake as it dries so it doesn't stick. Was my first time trying this and I nailed it perfect so u can too plus I used quarter cup of kernels and ripped a bag of microwave popcorn open and washed those so it was half n half lol worked fine on the short supply. My 2nd advice is also make shur u disolve the sugar the best u can I woulda disloves mine a but longer just to see if it made a difference but its fine how it is. I use 80 heat out of 100% on large burner electric glass stove top started on 100 when I added kernels put it to 80 and it started popping in 2-3 min of stiring finished in less then 4min great recipe just gotta be fast on the hands. When its done its done so get that shit outa there

    This is the first batch I made that didn't burn. I decided however to try to keep it the same as what he was doing. I used a stainless steel pan this time instead of my ceramic non stick aluminum pans. I also used plain yellow popcorn instead of the multi colored kind. But I still used coconut oil. I also put three kernels in the pot while the oil was heating up and waited for them to pop before adding the sugar as he did. Everything else was the same. It worked great.

    Electric range heat about 7/10. Large pan with lid I cut open a microwave pop bag and added the oil and sugar like you said and dumped the rest in. Cook and shake with lid on until you dont hear a pop for 2-3 seconds. Lid off, serve. 👍🏼

    Made this recipe and it was perfect. Don't have the heat too high though and you'll burn it easily. Compared to making buttered popcorn on the stove, the kettle we just made had a lower volume of popcorn than the buttered popcorn I make on the stove. So don't be fooled if the amount of popcorn doesn't fill up the pot as usual.

    I just made some but I used avocado oil, some bacon greese, and some beef tallow I just guessed at the measurements think I used a little too much sugar but it turned out good 👍 thanks for doing the video, Awesome informational educational video experience Y'alls God Bless Ya

      Thanks. I like the idea of getting away from highly processed seed oils like canola or soybean oils. Your avocado, bacon and beef tallow mixture adds more flavor to the popcorn too.

    Let your steam vent out while popping. It keeps the condensation from falling back down on the popped corn which can make it soggy.

    Just a suggestion and i tried this way but add the oil and kernals at the same time then turn the stove on high. Wait till u see your first kernal pop then add the sugar and cover. Make sure u slide back and forth and shake up and fown as well while holding the lid. The sugar will melt and form the popcorn kernals into a ball but it will work. Eventually the kernals will pop and the sugar wont burn

    I think i'd use coconut oil which has a higher burn rate than any other cooking oil. In this way the sugar would have time to completely melt without burning the corn. Thanks for sharing.

      I've started using coconut oil too. Coconut oil also gives the "movie popcorn" flavor.

    Very clear, 3 tablespoons oil, 3 tablespoons sugar and ½ cup popcorn. Add salt to taste however you like it! Follow the video!

    So mine took way too long to start popping, by the time most of the kernels were popped, much of the popcorn and sugar was burned and black in places.. it also did not taste even close to sweet enough.. I used canola oil and regular white sugar.. temperature was a smidge over medium on a gas burner and I stirred and shook the pot constantly throughout.. any idea where I may have gone wrong? 😕😕

      Based upon what I saw when watching the Kettle Corn makers at fairs, they seem to heat the oil for quite a while on relatively high heat. My suggestion is 1) let the oil heat up on medium-high for a minute. (However, you don't want the oil to smoke.) 2) Add the kernel, and stir, if the oil is hot enough you will see the kernels turn white under the skin. 3) About, 15 to 30 seconds later, Add the sugar and mix constantly. 4) When the kernels start popping, keep mixing and shaking. 5) Try not to pop every last kernel. As you probably seen at the end of my video, I tried to pop every kernel and some of the kernels burned. In regards to the amount of sugar, I try to keep the kettle corn slightly sweet, but you can try adding more sugar if you like it sweeter. Good luck!

      @@eat4f1 thanks so much for getting back to me.. it was only about 85% popped when I pulled it off the burner, so I don't think i left it too long.. but I definitely could have added the kernels too early, I didn't preheat the oil before adding the sugar or for very long before adding kernels..       Thanks! One thing I should point out is don't cook as long as I did. I tried to get every kernel popped which led to some burned bits. Making kettle corn is pretty easy so go for it! Enjoy!

      Thanks for the comment. Cinnamon - I would try adding after the popcorn is popped using a shaker. My thinking is the cinnamon might burn if you add too early. However, you can try adding as the popcorn kernels are just starting to pop so you can mix it in. You need to be a little fast here since popcorn is starting to fly around if you take the lid off. lol

      @@eat4f1 Thank you :-D I added it just like you suggested, I waited until the corn almost started to pop, then added the cinnamon and put on the lid. Worked out great:-D Thanks alot.

    Ive done this exact recipe step by step 3 different times now and its burnt every time. The popcorn doesnt pop until the sugar crystalizes and separates fron the oil. Im also atuck with a gas stove. Any tips for gas??

      Thanks for the question! An alternative is to add the popcorn to the hot oil first. When the popcorn turns yellow, about 20 seconds, add the sugar and start stirring. Good luck!

    I tried making this today but I messed up the order because I was doing it from memory from a recipe I read a while back. After they started popping, I poured in the sugar & tried mixing. I burned my arms a little & had clumps of sugar on some kernels and other kernels were plain. Lol oops!!

    Tested with a few kernels first then when i poured in the half cup of kernels, not even half would pop burning the sugar and it wasnt near being too high

      Sorry you it didn't work for you. I suggest heat on medium or a notch above medium. What you can try is to add the popcorn first and stir (I would suggest using a wooden spoon), then add the sugar and stir, stir, stir... When the popcorn starts popping, cover loosely so you can stir to prevent popcorn flying everywhere. I hope that helps.

    Can I use butter instead of the oil?

      I would recommend clarified butter, ghee or mixing oil and butter would be my recommendation. Real butter melted from sticks/cubes still contain milk solids which will burn. Also, what you can try is adding butter right when the popcorn is starting to pop and shake the pot to distribute.

      To clarify butter, just melt the butter first and pour off the liquid leaving the solids on the bottom.
      However, since the recipe calls for 3T of oil, you can experiment with just using 1/2 stick of regular butter. It may work since butter has a smoke point of 350 degrees F and popcorn should pop around 212F.

    regular sugar carmalizes no idea about stevia but i just made some and decided to look online to see other peoples sugar amout. I usually use a 3rd cup and it browns and carmelizes as it cooks. When its done some is white smoe more brown and glazed.
