A Subscriber's Meatloaf/Pie Crust Recipe

  • One of our subscriber's shared her meatloaf recipe and it was family hit. Even my husband liked it and he isn't a fan of meatloaf. Thanks to Viking Momma for the recipe! My pie crust recipe is easy and freezes perfectly. #haciendahomestead #family #farm / @jennawrightlife
    Meatloaf:
    1 LB. hamburger meat
    1 LB. Italian sausage
    2 eggs
    1 sleeve saltine crackers (crushed)
    In a bowl, mix everything together. Put in loaf pan. Bake for 1 hour on 350. Let rest 5-10 mins.
    Pie Crust: (makes 2 crusts)
    2.5 C. AP Flour
    1 t salt
    2 T sugar
    20 T butter (diced)
    1/2 C. vodka
    1/2 C. ice water
    In a food processor, add 1.5 ups of flout, salt, sugar, and butter.
    Pulse until butter is pea sized.
    Add remaining flour and pulse a few times.
    Slowly incorporate water and vodka into flour and butter mixture in food processor, pulsing until combined.
    If dough is too wet, add more flour.
    Divide dough into two equal parts.
    Freezes great.
