- MAE HONG SON (แม่ฮ่องสอน), THAILAND - Welcome to Muang Pon Village (เมืองปอน) in the northern Thailand province on Mae Hong Son, isolated in the mountains. This village is home to an amazing Shan, or a Thai Yai (ไทใหญ่) community who are originally from Myanmar. They have very unique food and ingredients that they use.
Today we are focusing on some of the amazing healthy salads of Shan food. Most of the ingredients were harvested right within the backyard or within the surrounding hills of the village.
They made a number of different combination salad including chilies, garlic, shallots, and fermented soy bean discs for that boost of plant based umami - which is a huge key to the deliciousness of the food.
There was a salad made with lablab or Hyacinth bean, a salad mixed with green young shoots of tamarind leaves - one of my personal favorites - and another salad made with blanched ferns and sesame seeds. They also made a chili dip with roasted tomato and fermented soy beans and a soup with mustard greens and ginger.

Mark, I can't begin to convey how much your Big on Spice series means to me. I've wanted to visit Thailand (and SEA) for so long but have been anxious about food since I don't eat meat or fish. Postpandemic I am planning a trip using all this information and am SO EXCITED!!! I just love seeing all the produce and herbs that are so integral to a local region. the best thing to do in Asia is to say you are Buddhist and most restaurants understand that and will be able to direct you to food which doesn't have meat or fish!!!

So much to love about northern Thai cuisine and food culture. I think it really is the worlds most sophisticated in terms of flavour, texture and complexity with balance.

As a loyal vegan viewer of all your channels and videos, I absolutely love every kind of dish and cuisine you enjoy; I don't shy away from meat dishes, especially the variety and complexity of some foods you have found all over the world. (In fact, its almost a trick I play, when I eat my vegan food and watch you enjoy all the meats, b/c then it's like I am eating the chicken, pork, seafood etc). Plus, I've eaten many meats throughout my life, so I'm glad I can dream a little. BUT, when you profile plant based foods like these, it's the meals I most wish I could actually share with you and those who prepare them. ESPECIALLY when I see TAMARIND LEAVES?? Those are stunningly beautiful! Makes me veggie green with loving envy. Earth is Amazing. Thank you, and yum!!!

I Absolutely Enjoyed Every Second of this video. Watching your Big On Spice Channel in your series in Thailand has made me strongly realize that I LOOOVVEEEE THAI CUISINE of any kind.
I grew up eating South Asian Food, so my Pallete looks for chillie and spice. Usually South Asian Food has that dried spices turned into paste which i love, yet i find myself drifting more towards Thai way of Fresh and Dried Spices.

I'm not sure if you find this soybean powder in the State. I live in Maehongson and even in Thailand this is quite a unique dish, most of Thai in other provinces don't know about this menu. It is easy to buy this soya powder( Tua Nao) from local markets here as a ready made packet. It give you salty taste and protein at the same time.😋

Namprik tua nao is my most favorite kind of nam prik, but I have only ever had it with the fresh fermented tua nao, not the dried discs. If you haven't tried it fresh yet Mark I have to recommend that you do! Thanks for a great video- this one really made me homesick for northern Thailand.

Now this is amazing veggie content! I much prefer this type of cuisine to more westernized vegetarian food that seems to be missing something. All the versions of fermented beans and unusual vegetables were a real revelation to me and gave me some more pandemic home fermenting ideas! I especially love the idea of drying fermented bean paste for long term storage and making a powder from it. Umami sprinkles! And the sassy aunt must have added a little extra flavor to the meal!

In the Phil, we also cook young tamarind leaves with flowers with chicken, or milkfish(bangus) and with morning glory with finger chilies(3pcs) onions and a few taro roots. It's called Sinampalukan (tamarind fruit and leaves and flowers) bangus (milkfish) or sinampalukang (cooked in with tamarind fruit with young leaves and flowers) manok (chicken). It's another style of Sinigang, a sour soup , a well known soup in the Philippines!

WOW Big change from the U.S.A cross country diet! Yeah; the Tua Gnow Peng (disks of dried, fermented soybean) seem to be ubiquitous in Northern Thai cooking, not just Thai Yai. My wife used to make them with her mother from Soy beans that they grew. She explained the long, complex process. You see them at every store and market out in the country up north here. I'm lucky enough to have had at least 1/2 of that meal Mark is eating there. I love that place and have watched most of the other videos from there! Would love to visit Pe (Aunti,) there!

Not gonna lie; vegetarian food can get boring. I've been a vegetarian for 6 years, and it can get hard sometimes here in a western country. But this video gives me new hope. I've never heard of these veggies before, and I can't imagine the flavours of these dishes. Everything looks so good. Makes me want to go to Thailand to try this so bad 😩
