This is almost the same recipe as the vegan pudding they make in my city, except they use coconut milk, kabocha squash. It's so delicious. I can definitely tell this will be delicious too. Can't wait to try it and save some of my money!
Carrot is a good substitute for pumpkin and it is sweeter. Indian dessert recipes use carrots as the main ingredient in some of their sweets. I still have a long way to go to watch the rest of your cooking videos and the non cooking ones. Enjoyed all of them and got me interested in veganism! Thanks!

Can't wait to try this pudding! It looks similar to creme caramel. I'm curious if you pour the pudding in the pots immediately after adding the caramel and then put it in the fridge, and right before eating it, turn the pots over on to a plate. The top should be infused by the palm sugar and the syrup will drizzle down the sides.

dorayakikun2 If you feel it's watery, add starch like 1 - 2 tbsp. or use another kind of pumpkin. some pumpkins are really watery sometimes.
