    Mama Terezija teaches us How to Make an Authentic Apple Strudel from Scratch. Mama Terezija will be sharing her treasured family recipe, along with her special techniques, tips & tricks! Follow along to the easy step by step directions and you will be making Apple strudel from scratch just like a pro - starting with stretching the dough!

    Ingredients:
    • 8-10 medium sized apples (we are using Royal Gala & Granny Smith)
    • 1/3 cup unsalted butter, 1/3 cup
    • 1/3 cup bread crumbs
    • 1/3 cup canola oil + 2 Tablespoons for dough, and 2 more Tablespoons to roll the dough ball into before resting it
    • 4 cups (unbleached) All purpose flour, + more flour when mixing into a dough, as well as flour for dusting our hands and the surface we will be working on
    • ½ tsp salt
    • 1 large egg, slightly beaten
    • 12 ounces luke warm water
    • 2 Tablespoons of white vinegar
    • 1 x lemon, zested
    • Juice from ½ a lemon
    • 1 package of vanilla sugar
    • Cinnamon
    • 1 cup of white sugar
    • 1 cup of brown sugar
    *** (optional - Add Graham crumbs if using really juicy apples to help absorb the juices, some people don’t want to use a lot of bread crumbs so this is a really delicious addition and/or substitute)

    Thank you for your time and recipes. Brings back a lot of childhood memories. By chance have you ever thought of using a scale for exact measurements. Especially for flour. If you measure your flour several times then scale you will see you have different amounts. I find a strudel dough recipe can be tricky for most people so having the exact measurements may help. True…my grandmother never measure..all by feel and it came out so delicious every time. Thank you…

    I'm crying! Your strudel is the first I've seen that looks identical to my babka's. I've searched for someone who has a similar recipe that could show me the stretching technique. I unfortunately lived too far to visit her frequently and she passed before I was an adult. Thank you thank you thank you for sharing your knowledge with others so we can pass these recipes on to future generations.
    **If I am successful with this I hope to make these for my daughter's wedding next fall.

Holes in the dough will appear in some spots and that’s normal and ok. They are not seen after the strudel is rolled up and baked. Happy baking. Please reach out if you have any questions ❤️

    My Slovenian grandma taught me how to make her strudel which is very similar to yours, but she passed at 99 and now I have nobody to help me stretch the dough. She never told me if the stretching could be done with only one person. What do you and your mom think?

    The one you rolled looks incredibly long - but what you showed was a normal jelly roll / half sheet baking pan. How do you finish the edges? Are you cutting the strudel and doing something special to the cut end(s)?

      Measure out how much need based on the pan size. Using your fingers pinch and squeeze until it separates. This will also help seal the end that you end up separating. 💗

    i used to make strudljen with my Croatian grandmother and my mother as well ... the dough always trips me up though so i was so pleased to find your video showing your technique ... and no holes when you pulled it! My baka's was always paper thin; i marvelled at how she did it - i have yet to replicate it but keep trying. Our version has diced apples and no breadcrumbs, but I will try the Slovenian way next time I make this!

I could watch my mom for days, like your Baka, my Mami is the strudel dough pulling master in my eyes haha…I could watch her make it for days!!!     My mom would make several at a time, 3 for the family and she sold the others. Once in a great while, my mom would make one with cabbage. It was sweet, not savory. But usually it was apple.

    Are you from Canada; you sound just like me. My neighbor from Zagreb used to make this and also one with walnuts. Of course, if I wanted to take one home, I had to peel/slice the apples or shell and chop the walnuts which we picked after the nut harvest at the walnut groves.

    My family heritage is from Croatia and we grew up making a similar dish we called “pokatiza “ (I don’t know how it’s spelled.) The apples were not grated but chopped. I made it a long time ago with my grandma but she’s now passed away. My mom just sent me our family recipe and I can’t wait to try again. This video really helped because I was kind of intimidated about the dough. Thanks for showing the process. 😊

    Michelle, Thank you so much for this special apple strudel recipe. Have you come out with a Slovenian cookbook? You Tube is great, too, but a true Slovenian cookbook would make wonderful Christmas gifts for my daughter, brother & nephew.     Michelle, my mum was known for her delicious Apple Strudel. It was always fresh because it would not last a day in are home. She even paid her accountant with one for doing her taxes. Just sayin. Love this channel.

      Yes absolutely! Depending on how big of a pan you are baking them in, you should get 4-6 long pieces

      Since you say to cut the dough into two pieces and set aside....I would need all of the other ingredients for the next ball of dough that is going to get stretched.

    If you want crispy dough after baking leave the egg out.
    The egg makes it more similar to steamed ravioli.

    Puedes decir qué tipo de harina usaste? Qué porcentaje de proteínas tiene? Creo que es lo fundamental para que la masa sea flexible. Tiene una pinta buenísima!!!

He tenido mejores resultados con harina de media fuerza, con un porcentaje de proteína de un 12%. Pensé que a lo mejor teníais alguna harina especial, como los austriacos, que ya tienen una específica para el strudel. Gracias por contestar❤
