    Dear autumn, thanks a lot for this recipe. I followed your recipe exactly and I really like the “melt in your mouth” texture.       I don’t see the same mould in shopeee but I think baking shop sells it. You might need to try at any baking ship near you

      It’s the flour used. Every flour is different in absorbing liquid. You can reduce 20g flour and see

      There's double bake. 180deg 8min, egg wash then another 8-10min or till it turns golden brown. Need to turn on the subtitle.

      I would bake at lower temp for ball shape as the moisture is trapped and might crack more. I baked 160C for ball shape pineapple tart

      I have not tried that. Corn flour make the tart crispy fragile. But I have not tried using custard powder though

      I use 3 medium size pineapple, grind and drain the juice. Add 100g rock sugar and one cinnamon stick and cook it until dry

      Open tart might need a little more harder dough than this. You can adjust the flour amount to make it drier dough

      do you mean chill it before shaping? No I don’t. The harder the dough the more difficult it is to be piped
