片側に刃物の洗浄用のコンテナ、もう片方にスノコを作って研ぎ台にしています。
スノコの砥ぎ台は木製ですが、ウレタン塗装しているので研汁がかかっても汚れません。
砥石に合わせてクランプを固定する仕組みです。
どんな砥石でもピッタリと保持することができます。
簡単に作れるので参考になれば幸いです。

砥石の下にある台は、自作ですか？作り方は？砥石とその台は、ズレないのですか？また、砥石のみで研いでいるシーンが最後にありましたが、台が無くても良いのですか？ズレないのですか？

It doesn't matter how good the sharpening stones you use are, or the hours you spend watching videos and reading tutorials on how to sharpen like a professional. I never achieve what you see in the minute 9:43
The most important part of sharpening (and the most difficult to learn) is to keep the bevel of the blade flat against the stone at all times. You have to train yourself to keep the blade angle as consistent as possible, and not use too much pressure, just enough that the blade does not lose contact with the stone. Smooth, even strokes, avoid going over the edges of the stone. It takes practice and patience, but you can do it.

Where did you buy it?
It's called "spring loaded punch". You can get them in hardware stores but Lee Valley Veritas sells a nice set.
starrett makes two or three different kinds, one that automatically centers in a counter sunk hole in a hinge, or a couple of other ones without the the guide for the countersunk holes. the depth of mark can be adjusted

What is blade name?
I dont see the point of the bowl of water on the right hand side, when you use a bottle of water to wet the stone! Arent you supposed to soak the stones first?
Cutting the paper doesnt impress. I can raise a burr with a file that will cut paper!
The smaller container on the right is where you could soak your stones before use instead of filling the bigger tank with water. Some stones do not need soaking anyway. This actually eliminates the need for a water bottle. Everything compact in one storage box which you could periodically rinse and clean. To each his own. You could design one that suits your need I guess.
研ぎが分からないと、研ぎ台に必要な機能が分からないので、研ぎ台製作の構想が分からないので、ノーナレーションでいまいち。解説をして欲しいものです。まぁ見て想像できますが、工作が面倒です。
