I've eaten Jack all my life...since I was 5 or 6 years old, and I'm now 78. Properly cleaned and cooked, they're as good as the majority of "clean" fish. My grandfather used to take me fishing in the keys and we kept and ate everything we caught...almost all of it good.

Chefs tip to help with broiling is to keep the oven door cracked open while you broil. It’ll keep you from burning the food. All broilers in professional kitchens (we call them salamanders) have no door at all. Fun fact: your oven door will stop and stay about 4” open which is meant specifically for broiling.
When you take small fillets lay them on a broiler pan, brush them with butter and whatever seasonings (S, P, Garlic) that you like and then broil for 3 minutes then sprinkle Parmesan/Romano cheese on and broil for 3 more minutes, remove from oven and add chopped scallions over them .... absolutely delicious. Give it a try, I don’t think you’ll be disappointed.

Try breaking your live shrimp in half or thirds and just using the head half or third for Sheepshead. I don't know what it is but they love shrimp when the are present when presented like that. Don't know why so many people hate on Jack. I grew up in Jamaica and my brother and I ate hundreds of jacks, steamed, grilled, escoviched. It is a great fish to eat.
I remember first starting inshore fishing (Mayport, Jacksonville Fl) and decided I was gonna target me some pompano.... My buddy and I caught some giant Jacks, and we actually thought they were pompano! Filleted them up and fried em..... To this day the most disgusting fish I've ever had! I told my dad later that night that pompano is the grossest fish ever, he went to check the carcasses I threw in the pond and laughed for about 5 minutes straight before he told me what we ate. Definitely learned our lesson.

Hey I love your channel. I used to come down to Jupiter with my ex wife and we would eat at Jettis. I would get the steak tips and coconut shrimp and chill looking at the Jupiter lighthouse. Gabe, You mentioned you are a huge Bass Fisherman. I personally have never been here but am going with some bass club guys. Several have been to El Salto Mexico. After they take the tilapia nets out they say your arm will need surgery after three days of fishing. I think it would be awesome if you and Kelly were to do a video there. I bet we could get several from the Club to go catch some real fish. Here in Colroado it almost make you question fishing for these minnows compared to what you both catch.
