  • You've seen strawberry shortcake, and the best version is with a buttery biscuit. So, I mixed it up with a blueberry biscuit and sweet nectarines in a shortcake. Blueberry nectarine shortcake. You can do peaches instead of nectarines, but the nectarines really went amazing with this. I also had a couple to use that were the sweetest nectarines I've ever tasted they were absolutely perfect 👌 didn't need to add any sugar to them but if your fruit isn't as sweet or you want more just sprinkle sugar on top of the fruit to macerate.
    I opted to use a blueberry biscuit and fresh nectarine. I like to use frozen blueberries, but if you mix frozen blueberries into the dough, it'll get grey and discolored. The key is to use the blueberries frozen, dusted with flour, and added after the biscuit is mixed. You fold it in, and since you don't have to work the dough much, it helps prevent that discoloration. It looks like you used fresh blueberries! With the ease of using frozen fruit.
    Biscuits:
    2 1/2 cup all-purpose flour
    1 Tablespoon baking powder
    1 tablespoon sugar
    1 teaspoon salt
    1/2 cup salted butter
    1 1/4 cup buttermilk
    Heavy Cream, Brush On Top
    Sprinkle Of Sugar On Top, after it comes out of the oven, and it will melt on from the heat and give some texture
    450°F for 16-20 minutes
    Yields 6-7 biscuits.
    Whipped Cream:
    1 1/2 cup Heavy Qhipping Cream
    2 tablespoons powdered sugar
    1/2 teaspoon vanilla extract
    Nectarines, sliced
    (You can use any fruit you like, and peaches are also a great stone fruit you can use)
    Sugar (optional - if your fruit needs it)
