I made a version of your pasta bake tonight. I substituted zucchini for the mushrooms and spinach for the kale, and doubled the sauce in the recipe because I like it saucy. It was such a hearty nourishing meal. I'm so thankful to have it prepped for this week! Love your recipes and sending all the love and nourishment to you and baby.
I made the frittata this morning! Amazing! I used mushrooms, potato, onions, tri colored peppers, and broccoli. I never thought of making my base with the blended tofu. The spices really pulled it together you recommend. I also added some black salt. Thank you so much Nikki!💕
Thankyou for mentioning the little dish for measuring the spices - yes, it is just a small thing but it kind of makes the cooking process wholesome and it feels good to put all the spices in together (plus I think it looks pretty!) ❤
Seeing your frittita reminded me , I made your quiche recipe and it was such a hit with my family we are making it for Thanksgiving. A nice warm poncho saved me on my trip to NYC. It was a short trip around the holidays but I was living in Florida at the time and would have no use for a winter coat. Putting the poncho over my sweater or a lighter jacket really made it much warmer.

I love your fall cooking videos :) As a German, I have never eaten hummus with sauerkraut, but I will give it a try. If you like sauerkraut, you could also try a roll with vegan sausage, mustard and sauerkraut (everything warmed up). We use a roll that is crispy on the outside and soft on the inside. You could use baguette or hotdog rolls.
Those cookies!!! Regarding your favorite comfy dresses…have you noticed the 90’s tee shirt under a strapped dress look seems to be back? Add a long sleeve tee under your dress, a big old cardigan and some boots and you’ll be all set 😊

But I gotta tell you, the past few videos-everytime I see those bare shoulders I feel cold and just want to cover them up. I'm thinking, put on a sweater Nikki. Lol. Prob because I'm in central Oregon and it's quite cool over here.
Thos cookies look super good!! I did a lot of thrift maternity stuff. I bought my winter coat through Facebook marketplace. You don't need a ton of winter clothes, since you run hotter when you are pregnant. T-shirts and a nice light cardigan that is a size bigger than what you wear normally will work. Honestly I bought some stuff new, like leggings.
weird timing! I just made your quiche recipe the other day FINALLY and wow, it’s amazing!! I ate 1/4 of it each day and am sad it’s gone now. I love that it’s tofu because just egg is so expensive now…I def want to try this frittata version because then I don’t need pie crust. also, I just purchased sauerkraut for the first time because I know it’s good for you and I want to incorporate it into meals. thanks for the hummus toast idea-will def be trying!! 😊

We make toasted quesadillas with hummus, sauerkraut, and mashed avocado and it is so good.
